That particular one was a ground beef burrito, so preferable to
the kind with scrambled eggs in it. If it had had any decent spice
in it I might have counted it good, but very little Arizona food
has much in the way of spice (the Phoenicians think it does,
though).

It's a sort of soul place with a substantial black clientele.
The incidence of high blood pressure among blacks is quite
high - perhaps in part because they like to eat food like this.

One cool thing about the Philippines I discovered is that
very few of the foods - only ones adapted from European -
have any dairy in them except for butter.

I wonder how they are going to put those lymphocytes and

FICKLIN PORT LACE APPLES

Serves: 8

1/4 c Ficklin Tinta Port
2 1/2 lb tart cooking apples, peeled, cored
- sliced 1/2 to 3/4" at thickest part
- (about 5 apples)
1 1/2 Tb fresh lemon juice
1 c sifted all-purpose flour
1 1/2 c sugar
1/4 ts salt
1/4 ts ground cinnamon
2/3 c chopped slivered almonds
1/2 c melted unsalted butter
3/4 ts vanilla
1 1/2 c unsweetened heavy cream, very softly whipped

Pour Port over bottom of a buttered shallow 1 1/2 qt baking dish.
Turn apples with lemon juice to coat. Spread over Port in pan.
Thoroughly stir together flour, sugar, salt, cinnamon, and
almonds. Mix butter and vanilla; add to almond mixture; stir with
a fork until mixed and crumbly. Sprinkle evenly over apples. Bake
in a 375 F oven until topping is richly golden brown, about 35-40
min. Partially cool on a rack. Spoon out to serve, keeping sugar
mixture on top. Top generously with whipped cream.
