I've not been so worried as various other people who
make up for my relative nonchalance with an abundance
of concern. I do figure that it would be rude to keel
over and disappoint my constituency.

United is doing its best to make more costly than
necessary attractive - in order to requalify for
status next year, I have to spend $12K exclusive of
taxes. Not going to happen, think I, as I just don't
have that kind of dough.

Right. But there are few if any places that could match
the advantages that Singapore used to offer. Maybe India,
but that's a little dodgy even for my taste.

Of course, as intimated above, that has become less
important.

I actually thought of moving to Haiti - a friend started
a music school there, but it was wrecked in the earthquake.
I don't know its current status, but the country doesn't
seem to be appropriate to my own current status.

Singapore is wild over pork belly. That's always been a
mainstay of southern Chinese cooking; it's just that
recently there as here it has gotten cult status among
the affluent "foodies" (I hate that word and all the
shallow trendiness that goes with it).

Grilled Pork (Bun Cha)
categories: Singapore, Vietnam, starter
Yield: 4 servings

200 g minced pork belly
100 g pork shoulder, sliced
30 g sugar
Fish sauce  
1 sm hd lettuce, sliced into thick strips
Mint
Peppermint
Lemon mint
Purple mint
100 g shallot, minced
500 g fresh rice vermicelli
3 Tb caramel
h - Dipping sauce (mix all together)
5 c water
1 c fish sauce
1 c lime juice (or vinegar)
1 c sugar
4 ts chopped garlic
1 Tb chopped chiles, seeded, deveined

Marinate minced pork with half the caramel sauce and
half of the shallots. Make pork patties. Pan fry or
grill until well-done.

Marinate the pork shoulder with the remainder of the
shallots and caramel sauce.

After the pork patties are done, pan-fry the pork
shoulder in the same pan.

Make dipping sauce, garnished with cut carrots.

The pork shoulder and patties are dunked into this
and eaten with noodles and herbs.

Serve with rice vermicelli and lots of fresh herbs.
