Sometimes I start quoting a sentence that starts in the
middle of the line, and then it doesn't appear in the
spot where your reader thinks it would be if it was from
me. Also, I might not manually add the DS> to the beginning
of the line. Both of these might confuse your reader. And
in fact I wonder what it will do with the above DS> (and
this one, too) if you quote this reply.

A full-on solution would probably be costly.

By the way, referencing the subject line, I just took a
header on an ice patch on a hill. Unfortunately, I was
carrying a violin. Fortunately, I managed to get the
violin to go off to one side without my falling on it.
Unfortunately, I hit my elbow in the process. I was going
to do a bunch of playing in the next couple weeks. We'll
see how that goes.

Hanoi-Styled Spring Rolls (Nem)
Categories: starter, Singaporean, Vietnamese
Servings: 3 to 4

200 g minced pork belly
- (lean pork is ok too if on a diet)
100 g shrimp, shelled and chopped roughly
50 g carrot, minced
30 g beansprouts, chopped roughly
30 g shallot, minced
1/2 yellow onion, minced
3 sprigs spring onions, minced
30 g glass vermicelli, about 1 roll
- rehydrated in tepid water and chopped roughly
4 dried Chinese black mushroom
- rehydrated in hot water, diced roughly
10 g wood's ear mushroom
- rehydrated in hot water, minced
3 egg yolks
1 ts pepper
1 ts sugar
1 ts chicken powder
1 ts fish sauce
1 ts sesame oil
Rice paper wrappers

Mix the minced pork, shrimp, carrot, beansprouts, shallot,
onion, spring onions, glass noodles, mushrooms, with the
seasoning.

Roll about 2 heaping Tb of fillings per roll, sealing them
with a beaten egg.

Deep fry the spring rolls under medium-high heat golden
and crispy.

Drain on paper towels.
