For decades now I had been doing steaks on a hot, hot cast iron
pan, salted not oiled, as per Craig Claiborne's venerable New York
Times cookbook instructions with good results but recently, taking a
tip from someone on Serious Eats, I did some steaks at a moderate
temperature in a generous amount of butter, French bistro style. They
came out crusty and browned (from the milk proteins in the butter)
on the outside, and extremely juicy on the inside. That has become
my favourite wintertime method when I can't grill outdoors.

I had cherry tomatoes semi-ripening on the vine and had to do
something with them. The weather has interfered and I had a bunch
that had ripened in the house. I had to use them so I did a really
unbalanced tomato sauce with more onion and garlic than tomato.

It was about 3 parts onion (with a lot of garlic) to about 2 parts
tomato with salt, a big squirt of Sriracha, and some beef stock.
Cooked it down for a while and then cut up the sweetbreads a bit and
tossed them in. I like sweetbreads most any way but this was the
best.
