It is said there will be snow today and Saturday, and the
total in Boston rests at 2" lower than the all-time record.
Shouldn't be any on Sunday, when my concert is. Strange
development - my brother bought a ticket for this concert.
I think there's an Amtrak sale on and he's taking the train
up. How he expected to get to the Worcester area on a Sunday
I can't guess, but I have arranged for a friend to pick him
up at the end of the subway line if he actually shows up.
And a stay at a hotel using my miles. Thing is I don't care
if he shows up except that I forfeit the miles if he doesn't,
but I lose them anyway, so I shouldn't care at all.

I was coming back to Bob and Deb's house (Bob's the conductor
of that concert), and he had to back up out of his driveway
and take a running start to get to the garage. Wintry mix
today if the temperature gets a couple degrees higher than
projected.

Yep, no squawking. For elites (not really fond of that word)
they know that they'll eventually get the money anyhow some
other way. For normal people they give, grudgingly, a credit
usable for fare on a future flight on that airline. Of course
I had bought some really cheap tickets and will not be able
to duplicate the fares.

If I had unlimited dollars to throw at the project, the
cancellations wouldn't affect me, but the later you go in
the year the more expensive tickets get, for various reasons.

The airlines reported record-breaking profits late last
year. The contrast with this first quarter, well, I wonder
how they will weather that.

Indeed, and pretty much every attempt I've seen to distinguish
roasting from baking has holes in it. Anyhow, with an old
cookbook, one might have seen a recipe for baked turkey.

Moist & Tasty Baked Turkey with Cajun Brown Gravy
categories: Cajun, poultry, main, roast
servings: 12 to 16

h - SEASONING
2 Tb garlic powder
2 Tb salt
1 ts cayenne pepper
h - TURKEY
1 turkey (12-16 lb)
24 oz thick cut smoked bacon
extra virgin olive oil for drizzling
1 orange cut into wedges
1 lemon cut into wedges
1 md yellow onion quartered
1 hd garlic cut in half with skin on
h - GRAVY
3 md onions diced
1 bell pepper diced
drippings renderings from baked turkey
2 Tb flour
3 c water

Preheat oven to 325F.

Turkey - Take the seasoning mix and rub on to exterior
surface of turkey all around. Also, dust the inside
cavity with seasoning. Take the cut up orange, lemon,
onion, and garlic and stuff them into the cavity.
Place the bird into your baking vessel; large oval
roaster works best. Drizzle olive oil all over the
top of the bird. Cut the bacon package down the center
to make short strips. Place the bacon slightly
overlapped, covering the entire top of the turkey.
Put into the oven uncovered.

Follow the baking times recommended by vendor.
12 to 16 lb 4 to 5 hr. The last 35-40 min when the
bacon looks cooked, take tongs and remove the bacon.
The skin will brown up in the remaining cook time.
When turkey is done, remove drippings and place into
heavy bottom skillet. Cover the turkey in the roaster
tightly and let sit.

Gravy - Put onions & bell pepper into skillet with
drippings - renderings from turkey. Put on medium-high
heat. Begin the browning process. This is a larger
amount of base for gravy. It may take 45 to 55 min for
gravy to complete. Thoroughly mix the ingredients in
skillet, and let it sit for about 7 to 10 min
intervals before stirring. Do not add any moisture for
at least 20 min. When you see the mixture beginning to
stick to the bottom. Add 2 Tb hot tap water and begin
deglazing the bottom. Repeat this process 3 or 4 times
until you see a rich brown coloring of the mixture.
Add 3 c water; bring to boil. Add 2 Tb flour whisking
it into gravy to give body and even consistency. At
the end you can use some of the left over seasoning
mix to bring the flavor level up. Uncover the turkey.
Carve it up and serve. May serve over rice or potatoes.
The left over bacon works great as a garnish on some
of the side dishes you may serve...or make a BLT as
your reward.
