============================
Hi Nancy,

NB> RH>> This afternoon I cut up bell pepper, garlic and onion for shrimp
NB> RH>> creole for supper. Yes, it was good. (G)
 NB> NB>> Worth the work, then. :)

RH> Very good, and going to be repeated, maybe at an echo picnic?

 NB> I'd look forward to it... :)

Have to figure out where and when the picnic will be this year. Then
look at our schedule and see if it's do-able, and go from there.

NB> RH>> As usual. This morning a friend called and asked if I'd go
NB> shopping RH>> with her today (She has 4 kids, so needed help
NB> corraling them.) so I RH>> said yes. Because of the weather forecast,
 NB> W-M was a zoo & a half, but RH>> Aldi's was almost empty. Got home
NB> and made a quick chili for supper but RH>> didn't get the machine
NB> sewing work done I'd intended to do while the RH>> light was good.
 NB> Tomorrow, maybe.

NB> Some things just take a higher (if unexpected) priority... :) I've
NB> managed to somehow get almost a week behind, just from busier days and
NB> needing some time away from the computer... :)

I understand, I figured something of a higher priority kept you from the
computer. I didn't get too much, but some, sewing time in last week, but
have done some this week.

RH> install gutter caps this spring but will do a blind corner cabinet
RH> modification shortly. He just ordered a kit that will convert that
RH> area into a modified slide out.

NB> True. Some things need doing first, to make the house workable and
NB> liveable... and you can't do things in the garden for a little while
 NB> yet anyway... :)

Today would have been a good day for it (we were in the 70s!) but it's
to chill off again tomorrow, with the possiblility of snow/freezing
rain. Steve did some under the house work today so he can do inside work
tomorrow.

NB> meeting, NB>> my car said that it was -4... Today the high got into
NB> the mid-20s, NB>> though, so it felt almost like a heat wave.. ;)

RH> We were in the low 40s today but tonight another storm is coming thru.
RH> We got about 2" from the one yesterday, could get 4-8" from the
 RH> incoming one.

NB> Sure has been a nasty winter, all around... almost seems as though the
NB> South has been hit worse than we've been, certainly in proportion to
NB> what we'd normally expect. :) We did, however, just survive the

We've had a couple of bad winters. Part of it is from the weather, part
from people not knowing enough to stay in and out of the weather.

NB> coldest February on record since 1871, here... ;) My sister was

I don't recall what ours was in relation to previous Februaries, but it
was cold and wet.

NB> jealous of Mississippi's snow this year... when we were there, we had
 NB> one
NB> snowfall with all of 1 inch... ;) They've had a snow with 5"... she

She might not have appreciated the 5" now, the way she would have as a
kid.

NB> was saying, think of the snowmen we could have made with THAT snow...
 NB> (G)
NB> Dunno if that was a record for them or not, though... :)

Depends on what part of the state. Down near the gulf, it most likely
would have been a record.

SHRIMP CREOLE

1 1/2 lb shrimp, fresh or frozen
1/4 c chopped onion
1/4 c chopped bell pepper (book said green, I used yellow)
1 clove (make it big) garlic, finely chopped
1/4 c butter or other fat, melted
3 tbsp flour
1 tsp (to taste) chili powder, I used Penzey's medium which has a bit of
heat, but not overpowering
salt & pepper to taste
2 cups chopped tomatoes
rice ring

Peel fresh shrimp, remove vein and wash (or use frozen, cleaned shrimp).
Cut large shrimp in half. Cook onion, pepper and garlic in butter until
tender. Blend in flour and seasonings. Add tomatoes and cook until
thick, stirring constantly. Add shrimp and simmer uncovered (book says
20 minutes, I say until pink--3-5) minutes. Serve in a rice ring. Serves
6.
