Ärende: pasta

That was essentially how Ron ate I suspect knowing his family, at least until
he met me <vbg>

Ron's mom was very English, his dad was Dutch with some Irish in there. His dad
really was the only one who enjoyed cooking and that wasn't until much later in
his life.

Over here, we eat a variety of foods depending on my whim that day Lol.. let's
see.. last week we had Reuben sandwiches on Rye bread, Parmesean Breaded
Italian-flavored pounded pork chops with Marina sauce/Spaghetti on the side,
Baked chicken tenders with garlic potato fries and some veggie, Meatloaf with
mashed potatoes and veggies, meatballs/sausage and Rigatoni. So I guess
potatoes and pasta both get a work out here <grin>

We sometimes have a lazy type dinner somewhat like the above.. minus the corn..
green peppers are a great addition.  Instead of tomato soup, I use simmered
tomatoes and elbow macaroni. I cook the elbows separately.   Covered with
grated cheddar, it goes in the oven for about 20 min., to a half hour :)

===Ground Beef Casserole===
Preheat oven to 350F

1 lb. ground beef
1 onion, chopped
1 stalk celery
[optional] 2 tablespoons olive oil
2 green peppers, sliced
2 cloves garlic minced
1-2 cups tomatoes minced or canned tomatoes chopped 12 ounces elbow macaroni
1 can baked beans or about 16 oz. freshly made baked beans salt, pepper to
taste
Basil crumbled, to taste.
1 or 2 cups grated cheddar cheese

Saute the ground beef, add the olive oil if it needs it, and then add the onion
and cook until translucent.  Add the celery, garlic, green peppers and saute
until peppers are cooked slightly.  Add the tomatoes.  Simmer for about 10-15
minutes.  Add the baked beans.  Meanwhile, bring a pot of water to boil, add
the elbows with about 1 tablespoon salt and cook until al dente. Drain the
elbows and add to the sauce/beef/bean mixture. Correct the seasoning with
salt/pepper and basil if you like basil.  Turn into a large casserole dish and
cover with grated cheddar cheese. Baked in oven for about 15-25 minutes until
heated throughout and the cheese is melted.
