Probably some other sauce, as I generally don't favor
Tabasco and will preferentially substitute an equivalent
and cheaper vinegar pepper sauce - Crystal, Louisiana,
whatever's around. The brands you mention, maybe, no,
yes in that order. Sriracha would give a sweetish flavor
and considerably more heat; also I wonder if the relatively
low acidity would be sufficient to freshen the catfishy
flavor. Texas Pete I avoid in general for two reasons - it
has a strange texture from too much gum, plus it is uselessly
mild. Cholula is still a worthy product, despite its zooming
popularity and consequent increase in price - I prefer Tapatio
or Tamazula (haven't seen that lately) for similar spicing at
a much lower expense.

MMMMM----- Recipe via Meal-Master (tm) v7.07

      Title: South of the Boarder
 Categories: Mexican, Appetizers, Snacks, Rentals
   Servings:  6

      1    Hot pepper
      8 oz Cream cheese
    1/3 c  Chopped black olives

  Directions: Prepare about 2 tsp. of the hot pepper by chopping it up.
  Remember: the "heat" is in the seeds and membranes inside, so if you want
  to keep it relatively mild remove all of that. Using an electric mixer,
  blend all the ingredients. Smear the mess evenly on a flour tortilla and
  roll it up. Chill in the refrigerator. To serve, cut the roll into little
  log segments and serve with some mild salsa. Source unknown
