 DS> Our eye doctor says that both of us have minor cataracts.  How serious

The system needs a diagnosis, I guess.

I wasn't given a choice but was told that my product would no
longer be offered. I could go on to one of several plans that
had varying fees per service; a quick math indicated that the
most expensive would allow me to continue mostly as I had,
with all drugs covered; the ones with lower monthly payments
had inflated copays and didn't cover the fancier new drugs,
and if I went for one of those, the prescription costs would
have been crushing.

 I shudder to think of what my recent hospital
 DS> visit might have cost if using the second offered plan.  As it was, it
 DS> cost me nothing out of pocket.

Usually there's a cap on the out-of-pocket.

 ML> Fat is flavor, but only up to a point. When it starts
 DS> I think that most flavors are fat soluable versus water soluable.

But you need only a bit of fat - beyond that, it's all gravy,
if you will. Some of us (me me me) like more than the minimum
of fat, but we have more enlightened physicians.


Indonesian Chicken Curry
250 g boneless chicken thigh (about 2 thighs), sliced into bite-sized pieces
6 Tb rempah (recipe below)
400 ml chicken stock
2 stems baby corn, sliced diagonally
100 g potatoes, 1" cubed, pre-fried in oil
3 green baby eggplant, quartered
10 g galangal, sliced and bruised at the root
1 Tb oyster sauce
1 stalk lemongrass, bruised at the root, sliced 2"
2 salam leaves (Indonesian version of bay leaves)
2 kaffir lime leaves
100 ml coconut cream
salt to taste
1 Tb canola oil
1 lime wedge for garnish
additional slices of red chilli for garnish
fried shallots for garnish
additional coconut milk for garnish
h - Rempah (pound all into a yellow paste)
200 g shallots, sliced
60 g garlic, sliced
20 g fresh tumeric, sliced
10 g galangal, sliced
10 g ginger, sliced
1 Tb coriander seeds, or powder

Opor Ayam

Fry chicken in oil and with galangal till no longer pink,
about 3 min on medium-high heat.

Add rempah, and toast it for 2 min.

Add kaffir lime leaves and salam leaves, and toss 1 min.

Add oyster sauce and stir through.

Add coconut milk, stirring through.

Add chicken stock, stirring through.

Add baby brinjal, baby corn and long beans. Bring to a
boil and then simmer for 30 min.

Add fried potatoes in the last 2 min to heat through
just before serving.

Garnish with a drizzle of coconut milk, a lime wedge,
fried shallots and sliced chilli before serving.
