1.7" more on top of the record-breaker. No more in the
forecast, but the record-keepers apparently use a July 1
to June 30 reporting year, for some reason, so who knows.

Oh, he's always been very awed by me, which is part of the
problem, actually.

But it won't help either and goes against my minimalist
philosophy. Even if the whatever isn't going to fix
itself, chances are there's nothing they can do to fix
it either.

I have been concertmaster for this guy for over a quarter
century, but it's been mostly since homelessness (the last
decade and change) that I've stayed at the house and become
almost one of the family.

Most likely, if.

Oh, I certainly doubt he'd be upset, especially if I
give a gift!

A strange recipe. Probably getting the maximum meat experience
for the least volume of protein. Though I might try it just
for the experience, I'd likely not favor it.

Was back in MD for a momentary lapse - committee meetings and
stuff in Boston now, then straight to spring training.

Still no clue as to why he went, but at least he said that
it was a good concert (no word on whether he liked it or not).

J. Baldwin's Calamari With Beurre Blanc Sauce
categories: seafood, main
servings: 4

1 lb calamari steak
2 c drakes breading flour
4 Tb capers
4 green onions, chopped
1 tomato, diced
1 Tb shallot, chopped
1 Tb peppercorn
2 bay leaves
1 lemon, juice of
1/2 lb unsalted butter, cubed
1 Tb extra virgin olive oil
1/4 c white wine
1/8 c heavy cream
salt and pepper
canola oil ( for frying)

Beurre Blanc Sauce. In medium saucepan add 1 Tb olive oil
on medium heat, add shallots, black peppercorns and bay
leaves. Saute 2 min, add lemon juice, wine and cream.
Let reduce by half. TURN HEAT DOWN TO LOWEST SETTING.
Cut butter into squares. wisk into sauce 2 cubes at a
time until all butter is gone. Please take your time with
this step! Season with salt and pepper. Reserve sauce in
cool area.

Cut Calamari into strips and coat with  breading flour.
Set fry oil at 375F use deep fry pan or fry daddy with
at least 3 - 4" of canola oil. Fry Calamri 3 - 4 min u
ntil golden.

Warm sauce - add capers, tomatoes and scallions.

Add fried calamari and toss together.

Serve on large platter and enjoy !
