Irritating enough. And that's for something that

That was the original way the character was designed,
and, way back when, almost all printed matter used the
figure you describe to mean "open quote." Then the clever
typewriter manufacturers streamlined things and pushed
to make the dual-purpose quote mark the standard, which
people started accepting. But trying to reconstruct the
typeset figure makes some sense if you are going to use
the same system for commercial printing as for regular
everyday use.

True enough, but if they'd originally built enough
headspace into the system, a lot of the problems
wouldn't have happened.

Buzzard Billy's Seafood Eggplant Pirogue
categories: shellfish, main
servings: 1

1/2 eggplant
seasoned flour
buttermilk
breadcrumbs
h - Sauce
2 oz margarine
1 ts chopped garlic
2 Tb chopped green onions
1/2 c sliced mushrooms
1 1/2 c heavy whipping cream
1 Tb Cajun seasoning
4 oz crabmeat or crabmeat blend
6 shrimp
3 1/2 oz shredded Monterey Jack

Peel and hollow out eggplant half to form a boat
shape. Coat with seasoned flour; dip in buttermilk.
Coat with breadcrumbs and fry for 2 min.

Saute the vegetables in the margarine until soft.
Add cream, seasoning, and seafood.

Reduce sauce until thick, and then fold in cheese.
M's note: reduce sauce before adding seafood.

Allow to cool 2 min, and then fill pirogue with sauce.
Serve on a bed of rice, side with sauteed vegetables
