It is perhaps ironic that though educational technique has
come a long way (in a good direction) the actual delivery of
learning has if anything deproved over the years. Possibly
a sign of greater income inequality.

Back then, no hall passes, no hall monitors even. And I
think the school doors were unlocked. You just raised your
hand and said, can I go to the bathroom, and the teacher
said, MAY I go to the bathroom, and you said MAY I go to
the bathroom, and the teacher said yes.

 RH> When you have an IV or something similar in the hospital, they put in

Oh. This one was much thicker than that, not filmy at all,
more like construction paper than plastic wrap, but impermeable.

It was that Gladwell guy who (citing other sources) pointed
out that it takes 10000 hours to master a field. I'd guess
that after those hours, muscular memory takes over pretty
completely, but before that stage, thinking about something
might be useful.

Longer cooking. Low and slow, as they say.

Of course we should have less of a sweet tooth, but
a ratio of 3 to 1 is way too skimpy - 2 to 1, more like,
maybe up to 1 to 1.

One can easily err in the other direction, making something
that is more like candy than cookies, though:

  Amount  Measure       Ingredient -- Preparation Method

   4      large         eggs
   1 1/2  cups          sugar
  16      ounces        semisweet chocolate -- melted & cooled
     1/2  stick         unsalted butter -- softened
   1      tablespoon    vanilla
   1      tablespoon    strong brewed espresso
     1/2  cup           cake flour
     1/4  teaspoon      salt
   1      teaspoon      double-acting baking powder
   2 1/2  cups          semisweet chocolate chips
   1      cup           walnuts

      In the bowl of an electric mixer beat the eggs and the sugar for
      4 to 6 min, or until the mixture is thick and pale, add
      melted chocolate, the butter, the vanilla, the espresso, the
      flour, the salt and the baking powder, and beat the mixture on
      the lowest setting until it is combined well.  Add the chocolate
      chips and the walnuts and beat the dough until it is combined
      well.  In a sheet of parchment paper, form the dough into a log,
      4 inches in diameter, wrap it in wax paper, and chill it for 3
      hours, or until it is firm.

      Cut the log into 1-inch-thick rounds, arrange the rounds 2 inches
      apart on baking sheets lined with parchment paper, and bake them
      in batches in the middle of a preheated 350F oven for 15 min,
      or until the tops are shiny and cracked slightly.  (The cookies
      will be very soft.)  Transfer the baking sheets to racks and let
      the cookies cool completely before removing them from the sheets.
      (The cookies will firm up as they cool.)  Makes about 12 cookies.
