Speaking of which, I saw a kid (maybe 20) today at a restaurant
who looked exactly like the Buddha. He was nearby enough for me
to notice that he was eating meat-filled potstickers with great
glee, which made me comment to my dining companion that the Buddha
must have come back and become unenlightened. Later we saw him in
the train station making distressing animal noises. There are
stories in many cultures of saints becoming idiots or vice versa.
It's not my place to wonder aloud about the ways of the universe,
but this was a disquieting little sequence of events.

I dunno, some of the steps are not necessary to make a
palatable dish, but they make a much better dish. In which
case I would trust myself to do them but not someone else
(read a restaurant).

Have you seen the color discrimination quizzes on the
Internet? Kind of interesting, though claims are made
for them that are next to if not impossible. I took a
couple and did quite well.

? Maybe you have a wider range than normal (i.e. can see
into what for others would be ultraviolet). There's no rule
that says that everyone's color range is the same any more
than that their discrimination is the same.

Hee Hing's Buddha's delight
cat: New Year, Chinese
servings: 6 to 12

1/4 c black tree-ear fungus
1/4 c dried snow fungus
3 oz dried bean-curd stick
2 oz dried bamboo piths
2 oz long rice (dried mung-bean thread)
1 c vegetable oil
8 oz fresh tofu (bean curd), cut in 1-inch cubes
4 c shredded won bok (Chinese cabbage)
1/2 c sliced carrots
1/2 c bamboo shoots
3 Tb soy sauce
2 Tb sugar
3 c water
1/2 c black mushrooms, soaked and rinsed
1/2 c straw mushrooms
1/2 c raw peanuts
1 ts sesame oil
Salt to taste

In separate bowls of warm water, soak the following for
15 min each, then rinse and drain: black tree-ear
fungus, dried snow fungus, dried bean-curd stick, dried
bamboo piths, and long rice.

In a wok or skillet, heat vegetable oil over medium-high
heat to 375F. Deep-fry fresh tofu squares 5 min or until
golden. Remove and drain tofu on paper towels. Pour off
all but 1/4 c oil.

Reheat wok to medium heat. Add won bok, carrots and
bamboo shoots; stir-fry 1 min.

Add black tree-ear fungus, snow fungus, bean curd sticks,
bamboo piths, long rice, fried tofu, soy sauce and sugar.
Toss to mix well.

Add 3 c water, black mushrooms, straw mushrooms and raw
peanuts. Return to a boil, reduce heat to medium-low,
cover and simmer 20 min or until vegetables are
tender and flavors absorbed. Season with sesame oil and
salt. Serves 6 or more.
