hahahaha.. yes, indeed.. severe opportunists :)  and I agree, it's definitely
good for all of them.. Finally the last few days even the pups have stopped
being so darn clingy... it's insane to me, but understandable, how much Toby's
death was felt by everyone here. He was a such a great dog.

I made this last night for the grandboys who spent the weekend here while Mom
and her boyfriend went to Niagra Falls :)

===Stacked Tacos===
Tacos, burritos, I can't tell you the differnence right now :) but I came up
with this after seeing something similar with soft taco shells in a magazine at
some doctor's office or some such <grin>

Preheat the oven to 400F

8 or 9 soft taco shells
2 lbs. ground beef
1/4 cup butter
1 package queso blanco (mexican melting cheese) 8 oz, sharp cheese
1/2 onion chopped
1/2 large fresh tomato, chopped
1 large fresh tomato, chopped
2 tablespoons flour
1/2 cup taco sauce with peppers, onions, etc. 1/2 teaspoon black pepper

For the hamburger:
1/4 cup taco seasoning, see below
3/4 cup water

Cheese sauce:
Melt the butter and then saute the onion in a medium size sauce pan. Break up
the cheeses into small chunks or grate and add to the pan over medium-low heat
until melted. Add 1/2 tomato chopped. Add the flour and stir.  Keep warm.

Brown the hamburger in a saute pan, then add taco seasoning and water.  Simmer
for about 15 minutes or until absorbed.

Generously butter a large oven-proof bowl. Place a soft taco shell on the
bottom of the bowl.  Cover it with the taco-seasoned beef, then tomato chunks.
Spoon about 1/2 cup or so of the melted cheese mixure on top of all. Repeat
until all the taco shells are used.

Put the casserole in the oven at 400F for about 10 minutes.  Reduce the heat to
350F for about 20 minutes more.


Taco seasoning for hamburger:
This makes a lot of seasoning, so store what you don't use in an airtight
container.

1/2 cup flour
1/4 cup chili powder
3 TB onion powder
1 TB garlic powder
2 1/2 tsp. salt
2 tsp oregano
2 tsp cumin
1 1/2 tsp cayenne
1 tsp coriander
