Sadly, mine aren't as diet-dependent as you report; that's
possibly because for many years I got used to a shortage of
carbohydrates, and my body adjusted; but when I couldn't
afford what was essentially an Atkins life any more, it
was impossible to readjust to a more standard diet.

Dave's tutorial, describing what he taught us at the
Lobsterfest, is after all these years still first on the
Google hit list, except for the videos, You can find it

Rereading his excellent description, I am reminded through
my fingers of the feel of doing the job.

---------- Recipe via Meal-Master (tm) v8.05

      Title: Michael's Stuffed Wings
 Categories: Appetizers
      Yield: 24 Servings

     12 oz Coconut milk
      5 oz Mushrooms; minced
      2 oz Chinese celery; minced
      1    Jalapeno pepper; minced
      1 ts Szechwan red-pepper paste
      1 md Onion; minced
      5 cl Garlic; minced
      3 oz Fish sauce
      2 lb Ground pork loin*
     48    Chicken wings, boned

  * I had intended to use 2/3 pork and 1/3 carrots, but I forgot to shred the
  carrots.

  Reduce coconut milk by half. Add vegetables and fish sauce and cook until
  liquid is all evaporated/absorbed. Cool. Add pork and correct seasoning.
  Stuff boned wings. Grill until deep brown on all sides. Serve hot.
