We're talking the future here. Though I may cry wolf from
time to time, or at least the box here does so for me, I've
managed to keep this thing going more or less for several
years past the first time it went on strike. I'm still
running the laptop witn XP SP3 and will continue to do so as
long as I can, security concerns notwithstanding.

Hyperterm may work, but there are fewer and fewer places I
can use it. Doc seems to have abandoned his telnet portal,
for example, and the ability to telnet in reliably every
day was the main reason I used his BBS. Anyhow, I'm having
quite a bit of difficulty with his QWK generator, which
doesn't seem to be giving me all the messages; I haven't
been in touch with him about it, and frankly I don't see
any reason not to transfer my operations to your system,
if you promise not to make too many improvements at once!

When the time comes. I've found BW to be the most satisfactory
for my needs. Used to use KingQWK, but that was long ago. The
others, each has had a quirk that I found irritating enough to
abandon it.

It looks okay, but with the carbs and the milk not particularly
good for many of us.

Queso fundido with roasted poblano vinaigrette
categories: starter, celebrity, Mexican
yield: 1 batch

1 Tb unsalted butter
1 Tb all-purpose flour
1 c whole milk
12 oz Monterey Jack cheese, grated (3 c)
1/4 ts kosher salt
1/8 ts black pepper freshly ground
8 oz fresh goat cheese cut into 8 slices
Roasted Poblano Vinaigrette
2 Tb cilantro chopped fresh
9 oz good-quality tortilla chips
h - Roasted Poblano Vinaigrette
2 poblano chiles roasted, peeled, seeded and chopped
1 Tb red wine vinegar
1 clove garlic
1 ts honey
1/4 c canola oil
Kosher salt
black pepper freshly ground

Preheat the broiler.

Melt the butter in a medium saucepan over medium heat.
Whisk in the flour and cook for 1 min. Whisk in the milk
and cook until slightly thickened. Remove from the heat
and stir in the grated Monterey Jack cheese; season with
the salt and pepper.

Scrape the mixture into an 8" cast-iron pan and place
the slices of goat cheese over the top. Put the pan
under the broiler and broil until the cheese is golden
brown on top.

Remove from the oven, drizzle with the poblano
vinaigrette or spoon it over the top; sprinkle with the
chopped cilantro. Serve with chips for dipping.

For the poblano vinaigrette.

Preheat oven to 375F. Brush poblano chiles with olive
oil and season with salt and pepper.

Roast until skin is charred and blistered on all sides
(15-17 min). Remove from oven and place in a bowl
covered with plastic wrap. The steam will make the
skins easy to remove.

Peel the skin from the chiles, remove seeds and chop.

Place chiles in a blender along with the rest of the
ingredients. Puree until smooth.

This can be made up to 8 hr ahead and refrigerated.
