I'll stay around until they pry the offline reader from my
cold, dead fingers. Or at least as long as one can read
and reply offline.

Many answers to this, the simplest being that they buy them
frozen in bulk from some factory. You can look this up and
find a golly gosh gee article on The Daily Meal (just to
mention one instance). Or the Sysco catalog, part of which

There are other possible but less likely explanations, not
less unsavory. The places I describe in the Washington area
often use indentured or minimum-wage or family labor to
make the things by hand - in such cases the product is of
uneven quality, as at Sichuan Jin River in Rockville.

There is a minute possibility that there is an army of
skilled professionals at work behind the swinging doors.
I have seen this phenomenon only a handful of times.

I like all the ingredients in a traditional pesto - pine nuts,
olive oil, basil, Parmesan - but don't care for pesto either.
Actually, I like basil only in some contexts, such as appetizers,
main courses, and desserts, but the grinding treatment of the
herb seems to accentuate aspects of the flavor that I don't
think go with the cheese and oil.

Basil-Lemon Sorbet

2 1/2 c water
2 c sugar
2 Tb lemon zest
3 Tb lemon juice
24 basil leaves
12 mint leaves

In a small saucepan, combine the water, sugar, lemon zest
and lemon juice. Bring to a simmer and cook until the sugar
is dissolved, about 10 min. Add the basil and mint and set
aside to steep for 3 min. Strain syrup through a fine mesh
sieve and set aside to cool. Transfer to the refrigerator
until thoroughly chilled, then process in an ice cream
machine according to manufacturer's directions. Transfer
to a freezer-proof container with a lid and freeze until
ready to serve.
