ML>> Glad to see you back.
NB>> Thanks... now, I only have to catch up, again... ;)
ML> A time destructor for sure, but that's what we're good at.

Indeed. :)

NB>> Properly made rice is a goodness... and not-so-good rice definitely
NB>> detracts from the whole... I was thinking more about the thickness of
NB>> the fish or other toppings... some are so thin, the rice better be
NB>> good, since that's mostly what you are getting...
ML> Sushi is all about the rice. We just got a bag of Nishiki
ML> medium-grain rice that says that it's "perfect for sushi."
ML> I beg to differ. It was, though, perfectly okay rice, though
 ML> a product of California.

Perfect for sushi in their minds, I guess...

NB>> Fu's, though, are nice pieces... and his rice is always superb... :)
 ML> A sign of a good chef.
NB>> His rolls are also well filled, nice fat pieces
ML> Who will never get to retire.

At least only under great protest from his regulars... ;)

NB>> Fake crab, cucumber, avocado, I think... Usually Fu makes me
NB>> Philadelphia roll, since I much prefer the salmon and cream cheese to
NB>> the fake crab... ;) Never had it with real king crab... I might
NB>> actually like it that way... :)
ML> Much better with real king crab, though I haven't seen that
ML> in a while, the best of late being the leg meat from small
ML> snow or large spider crabs.

That sounds decent, too... :)

ML>> I believe I raised an eyebrow here regarding how he could
ML>> hold the line on that price without compromising on the
 ML>> ingredients.
NB>> Most of the people getting it barely have the first plate (9 pieces of
NB>> nigiri, I believe, maybe it's just 7, and a roll sushi of 8 pieces)
NB>> and maybe the next plate, which is another roll sushi... of course,
NB>> they've already had miso soup, salad w/his ginger dressing, and
NB>> probably an appetizer (choice of any on the menu) ... Also, it seems
NB>> that most people seem to gravitate to the less expensive, more filling

ML> I wonder if a customer who is discriminating in ordering food
ML> from such a deal is held in higher or lower esteem than the one
ML> who eats in the way you describe.

Different kind of esteem, perhaps... :) He gets some fun out of giving
people what they want, when they aren't too discriminating... but he
also does very much enjoy the customer that is willing to try things,
and/or does have some discrimination...

He did quite nicely by Steve Haffly last night... :) Hafflys are in the
area visiting family, and stopped in for a visit here... wanted a place
for us all to eat after evening service... so we went there. Ruth had
the shrimp killer roll (tempura shrimp and avocado inside, shrimp
outside with eel sauce and a couple kinds of fish eggs), Steve went for
the all-you-can-eat... Fu gave him shrimp, yellowtail, salmon, tuna,
octopus, unagi, and a specialty tuna, along with some tomago pieces, and
a rainbow roll. For the second roll, he gave him three pieces each of
three different rolls (I think he might have made short rolls, or, now
thinking about it, they might have been left from a recent previous
customer's AYCE, if he was feeling creative, which may well have been
the case), futo maki, yellowtail with scallion roll and salmon roll. He
was too full for dessert, so he got it to take home... chose the tempura
cheesecake that Burt had (unexpectedly) enjoyed tastes of when we took
the Fords there... ;) He'd had the soup, salad, and fried ita for the
appetizer... As always, it was all very good... I expect that Steve may
post something about it... ;) We'd had dinner mid-day with our 4th
Sunday group at Texas Roadhouse, so didn't plan to order a lot for
ourselves... but couldn't pass up the miso soup or the salad, and got a
couple other appies so that Hafflys could taste a little more... the
seaweed salad and the crab rangoon... and then just couldn't watch them
eat the sushi without wanting some ourselves, so I got a piece each of
salmon, tomago and unagi nigiri, and Richard got an eel avocado roll...
And then we got a bowl of green tea ice cream to share... and give each
of them a taste as well... Afterwards, we ended up talking food and
cooking with Fu past closing time... ;)
