MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Pollock Thermidor
 Categories: Seafood, Dairy, Cheese, Vegetables
      Yield: 9 servings

  2 1/2 lb Pollock filets
      1 lg Onion; chopped
    1/4 lb Butter
      1 sm Bell pepper; seeded, chop'd
    1/2 c  Parsley; chopped
      4 tb Flour
        ds Pepper
      1 ts Salt
      1 qt Whole Milk
     12 oz Yellow American (mild)
           - Cheddar cheese

MMMMM--------------------------TOPPING------------------------------
    1/4 lb Butter
    1/2 c  Mayonnaise
  7 1/2 oz (1/2 box) Ritz crackers;
           - crushed
    1/2 c  Seasoned bread crumbs
    1/2 ts Salt
           Pepper

  Simmer fish in a small amount of water 10 minutes or 'til
  fish flakes easily. Drain and flake.

  Saute chopped vegetables in 4 tb butter, 5 minutes. Melt
  4 tb butter, stir in flour and seasonings. Add milk and
  cook until thickened, stirring constantly. Add cheese
  and continue heating until cheese is melted. Add fish
  and vegetables to sauce and pour in oven-proof casserole.

  MAKE THE TOPPING: Melt 1/4 lb butter, add balance of
  ingredients and mix well. Cover casserole with topping.
  Bake uncovered at 350oF/175oC for 15 minutes.

  Makes 8 to 10 servings
