Hi Janis,

>> CONTINUED FROM PREVIOUS MESSAGE <<

JK> > Yes, and it freed up some room in my pantry. (G)

JK> That's good ;) With this new kitchen even though we've been here for
JK> just over a year, I feel like I'm still getting the kitchen in some
JK> kind of order. The cabinet space is quite a bit 'less' than what I
JK> had in Windsor so it was quite frustrating at first. Ron has put two
JK> cupboards with butcherblock tops from Windsor that weren't really
JK> being used, in this kitchen; one holding the dishwasher, the other for
JK> stashing pots, bakeware, etc., and he moved the kitchen pot rack we
JK> had in Windsor over here. That is helping a lot. (g). I guess he got
JK> tired of hearing me swear at the existing kitchen cupboards (G).

You had a nice big kitchen in Windsor with some interesting storage
spaces. I know the fun of trying to fit things into a new kitchen tho;
I've had to do it quite often. It's always a challenge trying to find
just that right spot for each thing. I've also made lists of what's on
each lower cabinet shelf and taped it to that door--helps with deeper
cabinets knowing what's in it, in the back of other stuff.

 JK> >We've still got enough
JK> > pasta to keep us happy for a while. I eat about half the amount I
JK> used > to now, and usually with a big salad as part of the meal.

JK> That is something Mom always did.. she always served a big salad with
JK> pasta dinners, or on holidays, she'd serve antipasto with a variety of
JK> vegetables, and then a salad before the main meal.

My mom rarely made a salad; Dad didn't like them but eventually started
eating them. She never did learn to make a good salad. When we werre
growing up, the only thing that went with a pasta dinner was Italian or
French bread & dessert.

JK> This Mom's recipe for roasted peppers, we had this at most holiday
JK> dinners with other antipasto items:

 JK> ===Roasted Peppers===
 JK> Preheat oven to 500F

JK> 6 large red or green peppers
 JK> olive oil

JK> Brush all sides of the peppers with oil. Place the peppers on racks
JK> in the hot oven and bake until the skin turns black.

JK> When well scorched, remove the peppers from the oven and rinse well
JK> under cold running water until the blackened skins are removed. Cut
JK> the peppers into halves lengthwise. Remove the membranes and seeds.

JK> Toss the halves of peppers with a mixture of:

 JK> 1/2 cup olive oil
JK> 1 small clove garlic, pressed with flat edge of a knife or garlic
 JK> press dash of salt
 JK> dash of pepper

 JK> Serve at room temperature.

Looks good, and easy. We did about 3 half pint jars of peppers last year
when we found them on sale.

>> eggplant, no tomatoes, no peppers, no apples, no peaches, no
>> nectarines, no blueberries, no

JK> > Sounds like a friend of ours with a chlorophyll allergy. She
JK> couldn't > have anything green, very few other fruits or veggies.

JK> Yeah, it can be a challenge making dinner for her crew since two of
JK> her boys also have similar allegies.

You should be a pro at it by now tho. OTOH, I'd have a harder time
figuring out what to do until I knew who could eat what.

>> stawberries.. At one point she had to put all her No-Nos on a
>> spreadsheet since people kept asking her 'can you eat this at our
>> gathering?' :) I think I mentioned to you a while back that when her

 JK> > Smart idea!

JK> Yep :) I would do the same if I had allergies like she has.

I probably would too, just for my own sanity, let alone others.

>> determine what she was allergic to.

JK> > Not a fun time for either of you, I'm sure.

JK> For her especially.. our pediatrician put her on a diet of soy milk
JK> baby formula and 'safe' lollypops for two weeks to clear her system of
JK> allergens.. then he had me reintroduce every food, one at a time.
JK> Later in her life, she developed an allergy to soy so she has to avoid
JK> that now. Luckily at the time when all of her allergies hit, soy
 JK> wasn't a problem :)

We knew a kid that was allergic to soy, and other legumes. He couldn't
have peanut butter; our daughter Deborah felt quite sorry for him as she
loved it.

>> Yes, true. If not for my son hating chicken (and most meats
>> generally) I'd probably keep a bit more of it cooked and ready (g).

JK> > Hating meat or just wanting to eat vegetarian? I'd have a hard time
JK> > giving up some cuts of meat, others would go without regrets. (G)

JK> He generally just doesn't like anything with a lot of fat ... he'll
JK> eat steak, but in small quantities. Chicken, he avoids all the time.
JK> He's probably healthier than any of us Lol

Chicken is usually leaner than beef. Does he eat any pork?
