I've mostly had it (Empress/Skyline) at various truck stops in the Cincinasty
area (and usually on the Kentucky side of the river). When the choice is
between an overcooked burger, another poorly done roast beef Manhattan or
Cincinatti Chilli 3/4/5 ways ..........

Oyster/soup crackers are not overly salty. Unlike saltines.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Souffleed Saltines
 Categories: Five, Appetizers, Breads
      Yield: 24 Servings

     24    Saltine crackers
           Ice water
      4 tb Butter; melted

MMMMM-------------------------TOPPINGS------------------------------
           Poppy seeds
           Sesame seeds
           Coarse (kosher) salt

  Preheat oven to 400oF/205oC degrees.

  In one or more shallow pans of ice water, float a single
  layer of saltines until softened but not disintegrated,
  about 20 minutes. Remove with a slotted spatula, letting
  excess water drain off, and arrange in a single layer
  about 1 1/2" apart on greased baking sheets.

  Generously brush tops of crackers with melted butter,
  taking care not to press down. Top with a sprinkling of
  seeds or salt.

  Bake until crackers are puffed and golden, 20-25 minutes.

  Serve warm, or let cool on a wire rack and store airtight.
  If made in advance, reheat 3 minutes in a 400oF/205oC
  degree oven until crisp.
