=============
Hi Nancy,

RH> supper, and finished it yesterday. Now he's old enough to collect
RH> Social Security but debating if we should wait on it a few more years.

NB> If you have enough to live on coming in from other sources, it
NB> probably pays to wait and let it grow larger... We ended up starting
 NB> it before
NB> Richard was full age, mostly because we were not quite making it on
NB> what was coming in already...

We're making ends meet but not getting rich. The house payment is
actually just about what our rent was in the other place but we rounded
it up to pay more on the principle every month. But, we've no car
payment so the extra isn't missed.

NB> if I'd used all RH>> powdered sugar. The stevia for baking is a
NB> light, fluffy product, very RH>> much like powdered sugar so I
NB> thought it would work--and it did.
NB> NB>> The stevia for baking is still just stevia, no additions, just
NB> NB>> processed differently to make it fluffy instead of granular...?

RH> That's it, as far as I know.

NB> I asked, partly because I'd noticed that the Splenda for baking used
NB> sugar to make it work "better"...

I took a better look--it has maltodextrine in it. Still, something like
18 grams of carbs per cup as compared to 96 or there abouts for sugar
makes it easier on my system.

NB> NB>> It probably helps that you are experienced in thinking outside
NB> the NB>> "normal" cooking parameters... with a repertoire for
NB> avoiding certain NB>> food-related problems... one can extrapolate
 NB> easier that way... ;)

RH> Very much so. Now that the baby is a year old, mom is beginning to
RH> wean her so said we could start to incorporate more gluten products
RH> into our cooking. We'll probably ease into it somewhat, and continue
RH> to cook dairy free, for her son's sake.

NB> And she might find, after all, that she doesn't want to get too much
NB> gluten for herself, too... ;) And won't you need to still have
 NB> gluten-free for the baby...?

She's going easy on the gluten for herself, and making sure baby has
enough non gluten things to make her happy. Right now it's finger foods
that she can handle (g/f crackers, etc from home) plus mom or dad
feeding baby foods.

NB> NB>> Last night we had a joint Reformation Day service, at another
NB> NB>> church... the family from our church that is over 50%
NB> NB>> gluten-intolerent was there along with others from our church...
NB> NB>> there were refreshments after, supplied by the host church...
NB> NB>> Unfortunately for us, they aren't as used to coping with
NB> NB>> intolerences/allergies, so the drink choice was coffee, hot
NB> apple NB>> cider or water; and there were no gluten-free alternatives
NB> in the NB>> baked goods... At least there were alternatives to the
 NB> cookies
NB> NB>> etc... a couple of veggie trays (from which I could safely eat
 NB> the

RH> Bummer--somebody should have let them know to have something that could
RH> be enjoyed by those with problems.

NB> It just wasn't thought about...

Maybe next year.................

NB> NB>> raw celery and raw carrots) with a dip and a container of
NB> hummus... a NB>> plate with deli meats and a cheese ball, along with
NB> slices of cheese NB>> and a couple kinds of crackers... The
NB> gluten-intolerent kids could NB>> at least have some of the meats and
 NB> the veggies...

RH> Yes, but kids, being kids, want cookies too.

 NB> True. :)

I can see a bit of how they feel now, as I try to restrict some of what
I eat.

NB> fellowship... I NB>> think if I was thinking, I might have brought
 NB> along a package of
NB> NB>> gluten-free cookies, or at least suggested to Amy that she might
NB> want NB>> to do so for the kids... She and one daughter are normal,
NB> her husband NB>> and the other two kids (a girl and a boy) have the
 NB> gluten issues...

RH> She probably should plan to bring some all the time; if they're
RH> needed, then she has them. If they're not needed, then somebody else
RH> has had the foresight to plan for such contingencies.

NB> She often does... at the hotdog roast last month, she'd brought some
NB> special gluten-free "graham" crackers for s'mores for them... But I
NB> think we were just lulled by the fact that it's become commonplace at
NB> our own church to have that thought of by others... :) And, as I
NB> mentioned, we weren't expecting refreshments exactly... :)

I know, but g/f seems to be quite the issue now. Maybe next year
somebody will be alert to the fact that it needs to be addressed at
joint church services. Would your congregation host it next year
perhaps?

NB> year, time will tell. NB>> Maybe they drop later...? Or maybe they
NB> do run in cycles... :)

RH> We'e thinking it's cycles, like the avocado tree we had in our back
RH> yard in HI. Every other year it was loaded down heavy with fruit, the
RH> off years there was hardly any.

NB> Could be, then... you'll find out as time elapses... ;)

RH> Word did get around the years we had lots of it, but it still had
RH> more than could be picked, even using a long picker pole & basket.

NB> Guess you needed more friends to pick... and people with ladders and
 NB> cherry-pickers... ;)

It still would have had an overabundance of avocadoes.

Catch you later,
Ruth
