I cook other things in her kitchen - but, not chilli. My chilli rig with the 
spice stash is elsewhere. I also learned that she doesn't like bell peppers - 
which is often a component of my chilli. The biggest hit I had here (other 
than a simple chuck roast) was the Swiss Chicken.

Beale Street in Memphis (before the Tourist Commission got hold of it) was 
exciting enough for me. Now it's all cleaned up and "sanitised" to attract the 
tourist dollars. I saw many blues legends there in clubs for a 50c cover 
charge or a two-drink minimum. Including B. B. (Riley) King and Rufus Thomas, 
Memphis Minnie, the Memphis Jug Band, etc., etc.

In other parts of Memphis I saw Johnny Cash - before he left Sun Records, Carl 
Perkins (who did the ORIGINAL "Blue Suede Shoes") and went to a party at 
Graceland, invited by Elvis himselvis.

What they do is what they do. No concern of mine. I keep busy with chilli 
suppers and sometimes serving meals at the 8th Street Rescue Mission (long 
since moved from 8th St.) or the Helping Hands Shelter. My next big deal is 
the Sid Wood Memorial Toy Run -- On Sunday November 29, 2015, members of the 
Central Illinois motorcycle community will gather in the parking lot of the 
Pipe Fitters Local # 137 for the annual Sid Wood Memorial Toy Run. 
Approximately 70-100 riders will convene for "the oldest and the coldest" 
motorcycle charity ride in Springfield with riders from Springfield, Decatur, 
Salisbury and other surrounding communities. The event, was originally started 
by a local group of motorcycle enthusiasts to help Contact Ministries collect 
toys and raise money for their annual Christmas Giveaway. Sid Wood, a former 
Contact Ministries Board member (and local radio personality), enjoyed the 
annual toy run so much that it touched the hearts of his fellow riders, and 
that with his passing, the event was named the Sid Wood Memorial Toy Run in 
his honor. (partially cribbed from my motorcycle club's web site - the Sid run 
is one of our big events).

Or find another venue with meat as good and sides/ingredients that agree with 
you.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Swiss Chicken Casserole (Crock Pot)
 Categories: Poultry, Cheese, Soups, Dairy
      Yield: 6 Servings
 
      3 lb Boned, skinned chicken;
           - breasts or thighs
      6 sl Emmenthal Swiss cheese
           Mrs Dash seasoning salt
 10 3/4 oz Can cream of mushroom soup
    1/4 c  Milk
     12 oz Seasoned stuffing mix; (2-6
           - ounce boxes)
      1 c  Butter; melted
 
  Spray crock pot with non stick cooking spray.
  
  Arrange the chicken in crock pot.
  
  Sprinkle with seasoning salt.
  
  Top each piece of chicken with a cheese slice.
  
  Layer if necessary.
  
  Combine soup and milk and stir well.
  
  Spoon mixture over chicken and cheese.
  
  Mix butter with stuffing mix.
  
  Sprinkle chicken with stuffing mix.
  
  Cover and cook on low for 8-10 hours or on high for 4-6
  hours.
  
  UDD NOTES: Made this with thighs. Doubled up on the stuffing
  and increased the butter as indicated in the *current*
  ingredient listing. Green beans w/onions and bacon make a
  great side dish with this.
  
  Yield: 6 servings
