Make things worse! What I do in such cases is adopt my
flattest American accent and hope they give me sympathy
points for that.

Aha ... I used to be pretty good at east coast ones, but
not as good as Glen Gould, who (the story went) could tell
which side of the Garden State Parkway a New Jerseyite was
from.

Free-form kiwi & grapefruit curd tart

servings: 8

3 kiwifruit
2 pink grapefruit
3 Tb cornstarch
2 Tb cold water
1 c boiling water
3/4 sugar
100 g sweet butter, melted
3 egg yolks
h - pastry
2 c flour
125 g sweet butter, cold, chopped
1 pn salt
1 egg
1 Tb ice water

Finely grate rind of one grapefruit.

Juice both grapefruit. Strain juice and measure
1 c. In a saucepan, combine juice and rind.

Combine cornstarch with cold water until smooth;
stir into juice. Add boiling water and whisk over
high heat until mixture boils and thickens. Off
heat whisk in sugar, butter, and egg yolks. Cover
and chill.

For the pastry. Process flour, butter, and salt
until mixture resembles breadcrumbs. Whisk egg
and water together and add to processor while it
is running. Process until mixture forms large
clumps. Turn pastry out on a floured surface
and press together gently. Shape into a disk.
Wrap with plastic and refrigerate at least 30 min.

Oven at 200C/400F. Line a baking tray with baking
paper. Roll pastry out to a 30 cm (12") diameter
round and transfer to baking tray. Turn over edges
to form a rim. Pour in cold grapefruit curd. Bake
30 min or until pastry is golden and crisp.

Refrigerate 30 min to overnight.

Peel and slice kiwifruit. Arrange on top of tart,
allowing slices to overlap. Cut tart into wedges
and serve.

Speaking of people with accents, I recently found this
in a review of a comic routine in an Australian paper.
I will say that the observation is as true about real
life as it is about the stage -

 Greg Mayman seems to enjoy his jokes as 
 much as the audience.
