I lost some respect for him when I observed him plow
through an airplane meal robotically (perhaps he was
merely jet-lagged) and the rest of it when I watched
him play the fool or Greek chorus on Iron Chef America.

The guy is above average, I suppose, among presenters,
but his grasp of the facts is not as complete as one
would hope; plus a lot of his show was presented in
an irritatingly infantile way, but then that might have
been the fault of the Food Network's editorial style.

Eventually the experience will make you stronger, one
hopes. But the adage can't be taken too seriously, and
when I cite it, it's usually for humorous effect.

I just had this vision of scooters. Could you use scooters?

SCOOTER PIE MAC & CHEESE 
categories: fancy, dairy, main, side
servings: 8 to 10

6 Poblano peppers
1 lb macaroni
1 md onion
5 oz butter, divided
1/2 c flour
2 c heavy cream
1 c milk
12 oz Monterey Jack, grated
4 oz crumbled feta
1 ts salt
1/4 c Parmesan, grated
1/2 c breadcrumbs

Roast Poblano peppers under broiler, on the grill or on 
open flame until blistered and charred. Place in paper
bag for 10 min to loosen skins. Peel skins, discard 
seeds and membranes, and slice into thin strips. Cook 
macaroni according to package directions. Drain and 
rinse thoroughly with cold water. Finely chop onion 
and saute in 2 Tb butter until soft. Set aside. Melt 
1/2 c butter over low heat. Whisk in flour and cook 
1 min. Whisk in cream and milk and cook over medium 
heat 5 min, until mixture is thickened and bubbly. 
Stir in all but 1/4 c of the Monterey Jack, the Feta, 
and salt; stir until smooth. Stir in the sauteed onion, 
the roasted pepper strips and the macaroni. Adjust 
liquid to taste with more milk if needed. Spoon mixture 
into a lightly greased 13x9" baking dish. Cover evenly 
with breadcrumbs, Parmesan, and remaining Monterey Jack. 
Bake at 375F for about 45 min until the cheese is golden 
and the mixture is bubbly.
