Sysco Canada does not have a warehouse in Yellowknife but does
service us from Edmonton by truck. Being a small town I know which
restaurants buy from them as the logo on the freezer trailers are
quite large and bold.

Their fare is always fine but never extraordinary. Every single lamb
chop and duck breast in all the Yellowknife restaurants are Sysco
meats and come with the identical sauces (now that Pierre is no
more).

Like Dave and his GFS, we have a local competitor called Northbest
Distributors, owned by an acquaintance of mine, which has done very
well since the three large fly-in diamond mines started up, as all
three catering contractors use him a lot. Given the similarity in
names (my Coldwell Banker franchise's legal name is Northern
Bestsellers) I often get telephone calls meant for him.

I remember one in particular. It came in years ago at 6:01 PM on Dec
23. The guy said, "This is Bill from Ekati Services. Thank god you
are still open! I made a miscount, Have the hot shot guy pick up 6
more turkeys for tomorrow's sched." When I told him he had the after
hours number for a real estate company he just about had a panic
attack until I gave him Garland's home number.

(A hot shot service is an expediter of urgent rush freight and a
"sched" is a scheduled airplane flight as opposed to a charter and
the Dec. 24 one would have been the last one for several days.)

We're such a small town that I knew who managed the food wholesale
shop, the expediter, the airline and the mine's catering company.

Speaking of turkeys I plan to roast up another one tomorrow. We had
one in Oct. and then frozen leftovers periodically throughout Nov.
but are ready for more. (We like turkey a lot.)

I've been looking for alternative stuffing recipes. Perhaps it will
be this one if I go to the store for some fennel:

      Title: Apple-Almond Stuffed Turkey
 Categories: Turkey, Stuffing, Ham, Fruit
      Yield: 12 Servings
 
      1 lb Sliced bread
      3 md Onions; chopped
      3 md Tart apples; chopped
  1 1/2 c  Fully cooked ham; diced
      1 c  Celery; sliced
      1 tb Dried savory
      2 ts Lemon peel; grated
  1 1/2 ts Orange peel; grated
      1 ts Salt
    1/2 ts Each pepper and fennel seed
    1/2 c  Butter or margarine
  1 1/2 c  Slivered almonds; toasted
    1/2 c  Dried currants
      1 c  Turkey or chicken broth
    1/2 c  Apple juice
     15 lb Turkey
 
  Cut bread into 1/2" cubes and place in a single layer on ungreased
  baking sheets. Bake at 225 degrees for 30-40 minutes, tossing
  occasionally until partially dried. Meanwhile, in a skillet, saute
  the next 10 ingredients in butter until onions and apple are
  tender, about 15 minutes. Transfer to a large bowl. Add the bread
  cubes, almonds, currants, broth and juice; toss well. Just before
  baking, stuff the turkey. Skewer openings; tie drumsticks
  together. Place on a rack in a roasting pan. Bake, uncovered at
  325 degrees for 4-1/2 to 5 hours or until thermometer reads 185
  degrees. When turkey begins to brown, cover lightly with foil and
  baste if needed.

  155 degrees internal temp is plenty. The temp will rise to 160
  while the bird rests and any bugs will be dead, dead, dead and the
  meat still reasonably juicy.  - JW
