I see from charitynavigator.org that my local United Way has pretty much done 
a 180 on their expense to spending on programs (distributions to member 
charities).

Went to the Starvation Army's annual Xmas banquet yesterday lunch. They 
(Salvation Army) aren't rated by Charity Navigator, BTW. Made me glad that I'm 
not in the catering racket. 300 ten-top tables - fully occupied. Salads and 
desserts (pumpkin pie w/caramel laced KoolWip dollop) were already on the 
tables when the thundering herds were allowed into the venue. Dressings (ranch 
and red French) were somewhat longer in appearing. The meal - sliced turkey 
(loaf), a bog-nasty dressing, white, whipped potatoes, a single broccoli spear 
and cranberry sauce - was saved by the tasty gravy. Except that nothing was 
going to help that stuffing. I noticed that most of the plates gathered from 
our table and those in proximity had substantial amounts of the stuffing 
remaining on them.

      Title: Lightly Spiced Christmas Stuffing
 Categories: Stuffing, Breads, Pork, Vegetables, Herbs
      Yield: 9 servings

    200 g  (5 thick slices) white bread
           - crusts included
      1 lg Onion; quartered
      2 cl Garlic
        lg Handful of parsley
    450 g  (1 lb) good quality sausage
      2    Cox's apples; cored, peeled,
           - fine chopped
      3    Ribs celery; strings removed
           - diced
    100 g  (4 oz) pcg walnut pieces;
           - chopped
      1 ts Curry powder
      1 lg Egg
           Grated zest of 1 lemon
           Juice of 1/2 lemon
     20 sl Rindless streaky bacon

  Whizz the bread in a food processor to make crumbs. Tip
  into a large bowl. Put the onion, garlic and parsley in
  the processor and whizz until finely chopped. Add the
  onion mix to the breadcrumbs with the other ingredients
  except the bacon. Season generously and squish everything
  together with your hands until combined.

  Set aside about one third of the stuffing for the turkey
  and divide the rest into 20 pieces. Mould each piece into
  a little finger-sized sausage, then wrap each one in a
  rasher of bacon. Put the sausages into a shallow ovenproof
  dish, ready for roasting.
