Hi Janis,

>> I love peanut butter and often steal a swipe when passing by the
>> container Lol

JK> > So that's why you have to keep it as a standing item on the gorcery
JK> > list! Your secret is out! (G)

 JK> hahaha :) Nah, my swipes are a spoonful, that's about it (g).. I
JK> think my son and Ron do enough of it in to make it a standing item on
 JK> the list though :)

It's an every two-three months item for us, depends on how much cashew
butter we have on hand in addition to the pb.

>> at least :) I like eating peanut butter on celery, never tried it
>> with banana though :)

 JK> > He'll do it as a wrap sometimes instead of a sandwich--depends on
JK> which > he's in the mood for or the bread on hand situation.

JK> Wraps are good generally.. I found a number of them that were
JK> non-gluten and safe for me, but not my grandboys or daughter.. they
JK> put corn flour in them so I use them just for me sometimes.

They also use the higher carb tortillas a lot of the time so I try to
steer clear of them.

>> slice of apple skin (where the pectin is located) could be substituted
>> for the gelatin and still be considered "safe" for diabetics. Now the
>> jam/jellies I made in Windsor were made with concord grapes from our
>> grape trellis.. no lack of pectin there (g).. the splenda might work
>> well with my old recipes as well.

JK> > It's worth a try. I'm just checking the carb count on what I eat,
JK> > measuring out a portion or partial portion to get the amount of
JK> carbs I > can have at that meal. A little bit of sweetness goes a
JK> longer way now > than it used to.

JK> I'm sure. I think it was about 20 years ago that Ron and I stopped
JK> putting any sugar in our coffee.. before that we used to drink coffee
JK> "light and sweet".. the thought of that now feels ick :) Certainly
JK> the dairy would get to me now, and the extra sweetness.. Back then
JK> though we were probably only buying coffee ground, like Chock Full
 JK> o'Nuts coffee which contained so much non-coffee I think, it's no
JK> wonder we were killing it with milk and sugar (g).

I've never been able to stomach coffee--black, sugar, milk, combo, etc.
OTOH, I used to put both sugar & milk in my tea, then went with just
sugar, now it's stevia.

>> Sure, no problem there. It's just a frame with lattice attached,
>> really. Hopefully next year we can accomplish that. I'd love it.

JK> > Always a good amount to do to make a place yours once you move in.
JK> We've > done it so many times in the past..................

JK> Yes, same here. It used to be the first place I'd be painting and
JK> working on small additions, etc. would be the kitchen. Just to make
JK> it more ours :) We're getting there with this kitchen with the added
JK> cupboards I mentioned.. I'm thinking of moving the kitchen table out
JK> and just using the dining room table once Ron gets those butcher-block
JK> counters finished up. Maybe a few more along that wall would be
 JK> helpful, we'll see.

We'll have to see it sometime.

>> include for the dogs here, but it is substantially smaller than what
>> the dogs had in Windsor. They don't seem to mind much (grin). It
>> goes along the length of the house out to our garage.. The rest of the
>> yard is dog free (yay! (g)).

JK> > As long as they have running room I don't think the dogs will be too
JK> > "put out" by the reduction in space. It also helps you; you don't
JK> have > as far to look for them when they're outside.

JK> True.. :) Ron had the fencing company install a 6 ft. fence that the
JK> dogs can't (or at least won't) jump over. That's a foot higher than
JK> the fencing in Windsor had. He also had them make the gates here wide
JK> enough for his riding mower, which is a lot better than what we had in
JK> Windsor because the only mower he could use in Windsor was regular
JK> lawn mower push type.. granted there's less to mow here, but on
JK> extremely hot days, just buzzing the dog area with the riding mower is
 JK> a lot better :)

Sounds like you've figured out all the tweaks you needed to get the yard
into shape.

>> so he did the most amazing things with plants here.. every month of
>> the spring/summer (so far (g)), there has been some section of the
>> back yard in bloom with incredible colors.. one section of the yard
>> after the other :) Luckily, the section along the side of the house
>> were we fenced in the dogs did not include any of those beautiful
>> flowering plants :)

JK> > Nice! Did he plant a kitchen garden as well?

JK> Just a small patch where he planted some Italian tomatoes. I'll use
JK> that patch for some herbs and tomatoes next year.

I'd like to try tomatoes again but don't know where we'll be next year.
We decided to not try any this year because we knew we'd be travelling
this summer.

JK> he > was brought up. We'll grab a jar of home made chili sauce
JK> sometimes as a > ketchup sub; it's a recipe my mom used to make. Her
 JK> version had
JK> > basically no heat so I've zinged it up, more to our tastes now. It's
JK> > back in NC so I can't post it right now, sorry.

JK> Understand :) Well if you get a chance to post it that would be
 JK> great.

Remind me in a couple of weeks.

>> Hmm.. interesting that there is a low-carb ketchup. What do the
>> others put in their ketchup I wonder? Too much sugar possibly? I

JK> > Sugar is the main culprit for adding carbs; IIRC, this doesn't have
JK> any > form of sugar in it. A regular ketchup has 5 grams of carbs per
JK> > tablespoon (or 2, I forget which), this has only 2 grams of carbs.

JK> That's neat. Sugar content would be controllable just as your hot
JK> chili sauce is if you grabbed some tomato paste and made your own.

>> often made my own with little sugar, but generally we buy non-HFCS

If I were that much into ketchup I'd consider it.
