I have many good memories of the trailer my parents had. I hope we will
get lots of use out of this one. We have this trip, I have a conference
that I expect to use it for in April, and then we expect to use it next
summer. Other than that, it gives us flexibility to go that we did not
previously have.

We used to camp in a tent, but no more. The trailer is equipped with all
the basic necessities, which will come in handy. Neither of us wants to
sleep on the ground or on a cot in a tent, and neither of us wants to
hike to a campground facility in the middle of the night.

We will have propane heat, so we will stay warm. When we are plugged in,
we can run a small ceramic electric heater to save propane and still
stay warm. This trip will be a learning experience as we figure out the
best ways to stow things, what to take and what can be left home, and a
lot of other small details.

We will have a two-burner propane stove and a convection microwave oven
(which we can only use if we are plugged in, same as the air
conditioner). We do not have an oven. Our cooking will have to adapt to
the tools available.

      Title: Hungarian Barley Stew
 Categories: Main dish
      Yield: 8 servings

  1 1/2 lb Beef stew meat
           -- cut into 1/2-inch cubes
      2 tb Vegetable oil
  1 1/2 c  Chopped onion
      1    Garlic clove; minced
     28 oz Canned whole tomatoes
           -- undrained, chopped
      3 c  Water
    2/3 c  Medium QUAKER Barley*
      2    Beef bouillon cubes
      1 tb Sugar
      1 tb Paprika
    1/2 ts Salt (optional)
    1/4 ts Caraway seed (optional)
           Sour cream (optional)

  in 4-quart saucepan or Dutch oven, brown meat in oil.  Add onion and
  garlic.  Cook until onion is tender; drain.  Stir in remaining
  ingredients except sour cream.  Bring to a boil.  Reduce heat to low;
  cover. Simmer 45 to 50 minutes or until meat and barley are tender,
  stirring occasionally. Top each serving with sour cream, if desired.

  Eight 1-cup servings

  *NOTE: To use Quick QUAKER Barley, substitute 1 cup quick barley and
  sour cream.  Bring to a boil.  Reduce heat to low; cover.  Simmer 30
  minutes. Stir in barley.  Continue simmering 20 minutes or until meat
  and barley are tender, stirring occasionally.
