ML> And then I saw a picture on one of the fast-food-review
ML> sites (I read some of them for the humor, rather than

ML> that marketing direction, and the big P with no pop
 ML> is in our future.

Ah, welll.... maybe it's humor......? ;/

ML> Mommy, mommy, I need P! I am reminded of this kid I knew,

 ML> and Shakey's Pizza respectively.

Were they frequently frequented places by his family...?

ML> From what I recall of KFC spicy is that it's mostly salty.

Perhaps just as well that I haven't found it to try, after all, then...

ML> Well. We looked in vain - Annie looked in vain - for a
ML> cut up fryer. So I said I'd cut up a chicken and chose a
ML> nice fat 4-or-5-pounder, but she put it back and got this
 ML> 7 lb behemoth.

Uh-oh...

ML> So I ended up cutting it into more than the authorized
ML> 8 pieces: I did two breast halves, a keel bone, top back,
ML> bottom back, two drummers, two thighs, two wing first
ML> joints (the size of a normal drumstick), two wing second
ML> joints. Pulled the globs of fat out of the cavity. The
ML> thing was blessed with a liver, a gizzard, a neck, and
ML> two hearts. Annie was flummoxed by this, as she is used
 ML> to 8 pieces and 8 only.

And, apparently, no offal dainties, either... ;)

ML> In honor of me she didn't soak the meat in buttermilk
ML> (actually, she didn't have any buttermilk) but merely did
ML> a thorough dredge with lightly seasoned (s&p only) flour.
ML> Cooked slowly in lard in a heavy cast iron pan, four
ML> batches. It came out incredibly crunchy, but the crunch
ML> faded rapidly. I found it way underseasoned and sprinkled
ML> my pieces with cayenne and garlic powder, at which point
ML> the stuff approached what I had had in New Orleans.

Sounds pretty nice, especially after the doctoring... :)

ML> This coating didn't take well to sitting around, and in
ML> due time it got soggy soggy, worse in the fridge.

What happened..? Did it just absorb moisture from the air...?

ML> Oh, by the way, the blobs of fat
ML> got floured and fried as though they were chicken. I
ML> ended up eating the outside coating off and dumping the
ML> rest back in the skillet to be refried. Lots of Calories
ML> there. My first meal was the fat, some skin that had
ML> fallen off one of the breast halves, all the offal, and
ML> the lower back. This was the best of it.

I take it that you cooked up that bit of the chicken... :) I can
imagine some thinking that somewhat gross, but I think it sounds quite
lovely, actually... :)

ML> Subsequent meals were: one thigh; one thigh; the
ML> keelbone and the top back. This, to paraphrase Nixon, was
 ML> truly a huge chicken.

Indeed. :)

ML> The red beans and rice mix, it turns out, was the
ML> reduced-sodium version, which problem was solved by
ML> the addition of a bit of salt! It tasted pretty decent,
ML> but as has been suggested, a bit of additional onion
ML> helped a lot. Texture - it needed less liquid and more
ML> cooking than the package indicated; but at the end, it
ML> was okay. On reheating it was almost real.

That's not too bad then... :)

ML> When anyone goes absent, I wonder about the family or the them.
ML> Makes me glad when you're in touch with the Fords.

I try... :) Don't worry too much about me, btw... at the moment, my
sister Lydia (with her daughter) is off visiting friends in NZ for close
to a month, and, as they are 1/2 to 2/3 of the basic ongoing "staff" for
my mother's care, I'm having to be down there a lot more than normal...
In charge of the day-to-day operations and making sure that all the
shifts are covered is her niece who's also been part of the ongoing
"staff" and lives there... and I'm in charge of the medical aspects...
which has me heading down there to be present at all the in-home
therapies (PT, OT, ST), and to take her to doctor appointments... I'm
finding myself slipping further and further behind on my Fido-messages..
We're about halfway through the month... Mommy is making good progress,
and so far we're all surviving... :) Two of my other sisters have been
taking some of the day-to-day care, which has helped... :)

ML> And as another Annie says, So you got to hang on 'til
 ML> tomorrow, come what may!

Tomorrow, tomorrow, I love you tomorrow... you're only a day away... (G)
Yeah... ;)
