====================
Hi Michael,

ML> Fun - I hope Steve likes eggplant as well as we do.
RH> He likes it better now than he did some years ago. We were given one
RH> years ago that was so good we bought one at a grocery store. The
RH> boughten one was bitter so for years Steve didn't want anything to do
 RH> with eggplant.

ML> Got to be careful about the storebought ones. And perhaps

We saw some huge ones at Lowe's the other day; they stayed at the store.
I got a couple of smaller, striped ones at the farmer's market today.

ML> taste before using - certainly assess by interior color and
ML> texture. And, as I've mentioned, the salt and squeeze technique,
ML> optional for a good eggplant, immeasurably helps the less good
 ML> ones.

I'll do the salt method for large, store bought eggplants but don't have
to with the smaller ones I get at the farmer's market. Haven't had a
bitterness problem with any I've bought there. I'll probably pick up
more next week.

ML> Then when we were in AZ, I bought one to make eggplant
RH> parm. He liked it; I've bought a lot of eggplant since. During the
RH> summer, I get it at the farmer's market and we eat a good amount of
RH> it. I don't buy it as much in winter, preferring seasonal veggies as
 RH> much as possible.

ML> Yeah, but eggplant parm is so good in winter.

It's good any time of year. I might use one of the eggplants I got today
for a small batch.

ML> Got to keep alert - coatings on the protein, sugar and
 ML> cornstarch in the sauce.
RH> I know, and not all fast food places have complete nutritional
RH> information posted. That makes it harder to figure carb counts

ML> Eternal vigilance, what can I say.

Saw a PA at my doctor's office yesterday; she was happy with my
readings. My A1C was checked and down to 5.4 from 5.7 in May. "Blew"
things a bit tonight at a farewell party for a neighbor; had a bit of
cake & ice cream, pasta salad & mac and cheese. Balanced with cole slaw,
tomato salad, ham, cheese & part of a piece of Bojangles chicken.

ML> CORIANDER AND CUMIN BROILED EGGPLANT
RH> I'd have to leave the cilantro out for Steve's sake but otherwise it
 RH> looks good.

 ML> Yeah, I sometimes forget what people dislike or can't have;
ML> but the recipes are in no way a suggestion that you make
ML> them, anyhow - they're just "topical," and you can use,
ML> save, or discard at your option.

I know, can't remember everybody's everything. I tinker enough with
recipes, leaving out cilantro is as normal for me as subbing stevia for
sugar in oil & vinegar dressings.

-=> Ruth Haffly said to Dave Drum <=-

DD> What, exactly, do you think dirt is?

RH> I know what dirt is. There's dirt (soil) that very rich in nutrients,
RH> etc that's good for growing in. Then there's the dry, dusty, nutrient
RH> poor dirt which is what we've got in our back yard.

ML> Might have said "topsoil," and this encounter would
 ML> never have happened.

True, but the mind short circuits every so often.

DD> Doesn't have to be of humus or loam quality for mint.

ML> I just had to do this ...

 ML> ---------- Recipe via Meal-Master (tm) v8.01

 ML> Title: Humus Tahini Dip
ML> Categories: Appetizers, Vegetarian, Mideast, hummus
 ML> Yield: 4 servings

Seve made some hummus last night, took some with bazlama bread to a
farewell party tonight. He had to go home to get something for me and
printed off copies of the recipes for everyone, it was so popular.

 ML> -----

DD> I use the Morton Lite Salt (which is a 50/50 mix) *AND* take two 99mg
DD> Solaray Potassium amino acid complex capsules - which I buy at Food
DD> Fantasies (health/natural food and supplements store). Mine is needed
DD> because I take furosemide (Lasix) as prescribed by my croaker.

RH> I use an OTC potassium (potassium gluconate I think--bottle is in WF)
RH> plus try to grab a bit of banana or dried apricots most days.

ML> 99 mg is just so tiny a supplement. If our health were
ML> measured to the decigram, we'd be in big trouble; but if it
ML> is of concern to you, I suggest fake salt and not much,
ML> maybe, what, 1/10 teaspoon, I can't do the math in my head
 ML> any more.

I got put on a potassium suppliment yesterday--perscribed 30 pills but
have to take 7 and get a blood test about a week later. The 30 was so if
I need to continue, I don't need to get a new perscription.

Catch you later,
Ruth
