although in others the greatest attention is placed upon preparing and
marketing the cashew nut.

We might envision a cashew nut hanging from a tree branch much the same as a
walnut or a hazelnut, just waiting until the shell gets hard before plucking
it. Cashew nuts do hang from branches of cashew trees, but initially are
immature, and do not ripen until they have surrounded themselves with a thick,
fibrous, and very juicy covering called the cashew apple. It is the juice of
this apple, cashew juice, that is highly prized by some, either consumed on the
spot, or made into a beverage drink, made into wine, or even distilled to make
a fine brandy.

Cashew juice is rich in protein and carbohydrates, contains a significant
amount of fiber and vegetable fat, and is an excellent source of calcium,
phosphorous, iron, and carotene, as well as the B-complex vitamins; niacin,
thiamine, and riboflavin. Cashew juice is also a rich source of ascorbic acid,
vitamin C."

And after learning what is needed to get the cashew nuts from the cashew apples
I can begin to understand why cashews are so expensive in the stores.
 
The true fruit of the cashew tree is a kidney or boxing-glove shaped drupe that
grows at the end of the cashew apple. The drupe develops first on the tree, and
then the pedicel expands to become the cashew apple. Within the true fruit is a
single seed, the cashew nut. Although a nut in the culinary sense, in the
botanical sense the nut of the cashew is a seed. The seed is surrounded by a
double shell containing an allergenic phenolic resin, anacardic acid, a potent
skin irritant chemically related to the better-known allergenic oil urushiol
which is also a toxin found in the related poison ivy. Properly roasting
cashews destroys the toxin, but it must be done outdoors as the smoke (not
unlike that from burning poison ivy) contains urushiol droplets which can cause
severe, sometimes life-threatening, reactions by irritating the lungs. People
who are allergic to cashew urushiols may also react to mango or pistachio which
are also in the Anacardiaceae family.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Orange Cashew Rice
 Categories: Rice, Citrus, Nuts
      Yield: 3 servings

    750 ml Orange juice
    310 ml Long grain rice
     20 ml Butter
     30 ml Granulated sugar
     30 ml Orange peel zest
    125 ml Unsalted, broken cashew nuts

  Allow orange juice to come to a boil.

  Stir in rice and simmer, covered until rice absorbs
  the liquid.

  Mix in rest of the ingredients.

  Serve hot.
