Don't recall Dimitri's moussaka except that someone or other
had it at an echo picnic, and it might have had potatoes.

Ah, farmers' markets - I don't get to them often; missed the
one in Williamsport yesterday by 8 hours or so. The eggplant,
when I see them, sometimes amuse, tempt, even seduce me. I
was particularly taken once with a white one that looked
like a big egg. Don't recall it tasting any different, though.

Scrip only? I still think that 1/8-1/4 ts of salt
substitute in a glass of water is a cheap and powerful
supplement, safe enough if you don't take much more
than that.

Saint-Pierre et sa ratatouille
cat: fish, main
servings: 4

5 tomatoes
1 onion
olive oil
1 garlic clove, crushed
1 pn sugar
s & p
1 zucchini, diced
1 eggplant, diced
1/2 red bell pepper, diced
4 filets of Saint-Pierre (John Dory)
fish fumet
1 Tb cream
200 g butter
fines herbes

Peel, core, and seed the tomatoes; dice them fine.

Peel and mince the onion; sweat it in 1 Tb
olive oil. Add about 3/4 of the tomatoes, the
garlic, and the sugar. Correct seasoning. Cook
10 min. Add the zucchini, eggplant, and pepper.
Cook 10 min; correct seasoning again and keep hot.

Poach the fish in the fumet; drain and keep
warm on 4 serving plates. Distribute the
ratatouille among the plates.

Reduce the fumet until it coats a spoon; add
the cream and reduce again. Thicken with butter;
then add the remaining tomatoes. Sauce the fish
and strew with fines herbes.
