One can do well with just that, and the rest can come

I suppose that my idealized idea of Home Ec was at variance
with what you experienced. Strikes me valuable to lay down a
foundation of dry stovetop cooking, moist stovetop, frying deep
and shallow, dry oven, moist oven, broiling, and noncooking;
kitchen chemistry; measurements; knife skills; prevention of
injury. And most of all, dispelling fear of the kitchen.

I don't see the point of tagines - it is claimed that the
wonderful aromas float to the top of the weird chimney and
are condensed back down, but as far as I can see there is
no advantage to the shape, and just about any cover will
work just fine. I've cooked tagines in tagines and nontagines,
and to me the vessel is unimportant, and the result bordering
on uninteresting.

Roasted tomato and eggplant tagine
cat: vegan, why a tagine
serves: 4 to 6

10 plum tomatoes
1/4 c extra-virgin olive oil
s&p
3 md eggplants; diced
1 md onion; minced
1 Tb garlic; minced
1 Tb ginger; minced
2 Tb jalapeno pepper; minced
1/2 c raisins
1 1/4 c red-wine vinegar
1/2 c brown sugar

Rub tomatoes with oil; season and broil until
charred. Chop coarse.

Sear eggplant in very hot pan in batches until
browned. Set aside. Recipe says nothing about
oil for this or the next step.

Brown onions over high heat; reduce heat and
add garlic and ginger. Stir-cook 1 min. Add
tomatoes, eggplant, and all remaining ingredients
and simmer 5 min, stirring.
