OK ... truth be told, I trust bad thing from Walworth, WI more
than good things from the mainland. "Soy sauce is people!"

Hey, I think I answered this before.

I see all sorts of people using sweet onions in cooking. Why
bother, say I. Use real onions and less. Same with soy sauce:
don't bother to get the low-sodium, it's just diluted regular
with some extra caramel color for appearance' sake.

Speaking of. Today I got the shakes and happened by an outlet of
Asian Chao ... along with the usual sweet and sour grease, there
was the remains of some desiccated tofu in brown sauce on the
steam table (this was an hour ago, after the lunch rush was over),
just enough for a small plate, so, having checked out the Sbarro
and the Starbuck's and the McDonald's I decided that was the least
gross thing available, so I got that. It was surprisingly okay,
despite that the girl had asked me if I wanted mixed veggies instead
of the rice or noodles that I'd declined, and I declined those as
well, and guess what appeared on the plate, half a pound of half-raw
and half-soggy cabbage, broccoli, and (shudder) zucchini.

The tofu wasn't bad at all, the long stay on the steam table having
firmed it up even further, to almost a chickenlike consistency, and
the soy-based sauce (with onions and ginger) thickening in a not
unpleasant though salty way. It had been flavored with green pepper,
somewhat okay. So now, though I am expected at dinner, I won't be
hungry.

Porphyra soup
cat: soup, seaweed
servings: 4

1 Tb salad oil
1 sm onion thinly sliced
1/2 c thinly sliced celery
1/4 in fresh ginger, minced
1 Tb soy sauce
14 oz cn beef broth
1 c water
1/2 c dried crumbled porphyra
1/2 c slivered porphyra from homemade plugs

Use various species of porphyra.

Porphyra consists of about 20 percent protein while
possessing very few calories.

Wilt onion and celery in oil until the onion is
translucent, 5-7 min. Stir in the ginger, soy sauce,
beef broth, water, and sea vegetable. Bring to a boil.
Reduce heat and simmer covered for 5 min.
