I can say unequivocally that I am not my sister's keeper,
none of this waffling stuff. Of course, I have not the
inclination to do the other Cainlike behaviors, either.

It's not really my decision here. But both in Chiang Mai
and Chiang Rai there are Le Meridien hotels; these used
to be owned or influenced by Air France and were strong
in French-owned or influenced territorities; when they
were taken over by Sheraton, the level of luxury remained
with some enhancements, such as wi-fi. In between, there
are a couple nights at a cheap but supposedly safe inn,
but I can count on people behaving for a couple nights.
Right? Right???

Much corroboration that they are indeed the same. The Wiki article,
though, contains a bit of improbable silliness but offers no
explanation therefor. My BS-o-meter tells me that the article is
full-o-bull.

Yield: 1 batch

2 L whole milk
4 Tb vinegar
1/2 c sugar
1 ts ground cardamom
2 Tb melted butter
h - Syrup
2 c water
1 ts ground cardamom
2 Tb rose water
1 c sugar
1 pn salt

Sweetened Milk Balls in Rose Water-Flavored Syrup

In a large saucepan, heat milk; bring to a boil. Add
vinegar and give a gentle swirl. The milk solids will
have formed. Separate solids from liquid by straining
through a colander lined with a cheese cloth. Allow
to drain for a few hr. Transfer the milk solids into
a mixing bowl and combine with sugar, ground cardamom
and melted butter. Make 1/2" balls from the mixture.
Reserve the milk balls in a non-reactive pan.

In a saucepan pour water; add cardamom, rose water,
sugar and salt. Allow to simmer slowly, constantly
stirring, until the sugar mixture has thickened into
a syrupy consistency. Remove from heat; allow to cool.
Finally, pour the syrup over the milk balls in the
pan. Chill in the refrigerator. To serve, put a few
cubes in a serving bowl, topped with rose water syrup.

H'm, this recipe looks familiar. See rasgulla or
dudhbari (minus the nuts).
