First of all, that sucks big time. I'm sorry to hear that. Cancer is
a bitch and so is chemo.

Northwestern Air Lease, based out of Fort Smith, NWT and flying to
such obscure and remote destinations as Fort Chipewyan, Alberta
(it's between Wood Buffalo Park and Fort McMurray) still flies them.
Perhaps because second hand ones are dirt cheap and there is no
competing airplane that services those places?

One can even have a pickled onion in their martini once in a while
and the olives don't mind.
                                  
Friday I went shopping for Thanksgiving and the new store continued
to surprise me in pleasant ways. It has a butcher's counter, with a
good view of the open butcher shop staffed by a real live butcher
and a Halal meat section. I also found (and bought) watercress and
Limburger cheese, both for the first time here.

Dinner consisted of a stir fried seafood medley with mushrooms,
flamed with vodka, vermouth and Pernod (given the availability of
watercress, I had wanted to do Oysters Rockefeller but they were
sold out of oysters by Friday evening), a salad incorporating
spinach, watercress, celery leaf, tarragon, parsley and scallions (I
had everything Rockefeller on hand except the oysters), roast
turkey, sausage stuffing, mashed potatoes and gravy, Roslind's
famous mushrooms in sour cream, cranberry orange relish, stir fried
green beans with pimento, roast butternut squash with sage butter,
freshly made buns, pumpkin pie with rum flavoured whipped cream and
lots of wine, with champagne (Freixenet Cordon Negro actually to be
honest) to start. We were only four this year: Roslind and myself,
Roslind's sister Sandra and her guy Matthew. We did however send out
hot, covered plates, bags of half a dozen buns and a pumpkin pie to
two more people who were housebound and alone.

      Title: Turkey Parmigiana
 Categories: Turkey, Cheese, Eggs, Pasta
      Yield: 4 Servings
 
           Vegetable cooking spray
      2 lg Egg whites
      1 tb Water
    1/2 c  Italian-style bread crumbs
      2 tb Grated parmesan cheese
      1 lb Turkey cutlets; cut in half
    1/4 ts Salt
    1/4 ts Freshly ground pepper
     14 oz Jar prepared marinara sauce
           -divided
    1/2 c  Shredded part-skim
           Mozzarella cheese
      8 oz Spaghetti; cooked
      8    Sprigs fresh thyme; for
           Garnish
 
  Heat oven to 375 F.  Lightly coat a jelly-roll pan with cooking
  spray.
  
  Lightly beat egg whites and water in shallow dish.  Combine bread
  crumbs and Parmesan in another dish.  Sprinkle turkey with salt
  and pepper. Dip turkey into egg white, then coat with crumbs.
  Place on prepared pan. Bake 10 minutes.  Divide and spread 1 cup
  marinara sauce over turkey; sprinkle tops evenly with cheese. Bake
  10 to 15 minutes more.
  
  Heat remaining sauce and toss with hot spaghetti; serve with
  turkey and garnish with thyme.
  
  Notes: The turkey cutlets are "fried" in the oven to save on oil.
  A topping of marinara sauce and a side of spaghetti completes this
  hearty meal.
