=============================
Hi Nancy,

NB> NB>> refreezing any leftovers... Maybe with a good knife that can
NB> cut the NB>> block still frozen, one wouldn't have to thaw first...

RH> Unless you've got a super sharp knife, you may have to partially thaw
RH> the scrapple before slicing and refreezing (OK to do so as long as
RH> there are some ice crystals in it) your scrapple.

 NB> Exactly my point... :)

You should be successful keeping it that way. A lot of times I double
bag using the meal sealer to make sure it's fresh.

RH> We've brought it down from PA, starting as frozen but semi thawed by
RH> the time we got home. The last pan was fresh, made the day before.

NB> Either way, it would be easy enough to cut your slices to freeze for
 NB> later...

We did, got 16 slices (in addition to the 2 we ate) out of this loaf.
Packed in Meal sealer bags of 2 per, it should keep fresh until our next
trip up to PA.

RH> We usually do it as a side for eggs instead of bacon or sausage. One
RH> of my PA Dutch cook books suggested serving it with molasses; I'd
RH> rather have the maple syrup. Tried it once with honey but maple syrup
RH> beats that (IMO) for taste as well.

NB> Maple syrup has a breakfast taste to it... ;) Plus it goes well with
 NB> the salty-spicy of the scrapple... :)

Since it has buckwheat and/or corn meal in, the scrapple isn't quite
safe for Steve. He enjoys it anyway, like all good things, in small
amounts.

NB> RH>> We brought a pan (loaf) of it back from PA last week and
NB> RH>> cut it up to vaccuum & freeze in 2 slice packages with our Meal
NB> Saver. NB>> How large a loaf was it? Sounds bigger than the little
NB> one-pound NB>> chunks in the freezer meats that I can get. :)

RH> It was maybe a couple of inches longer than a 9x5 loaf pan from the
RH> looks of it. Maybe it was the same size but a quick look gave me the
RH> impression it was slightly longer than the standard bread pan. The
RH> scrapple was turned out on to butcher paper, then wrapped in more
RH> paper before being passed over the counter to us.

NB> Definitely a lot more meat than what I can get in the little one-lb
NB> block... :) Think individual loaf pan... ;) I'm guessing your loaf
NB> was more like 4 pounds at least, so you'd certainly want to break that
NB> down into individual meals' worth... :) Your two slices are probably
NB> a pound total weight or so... :)

We ended up with a total of 18 slices; I'd say maybe 4 oz each, give or
take a few grams. But yes, they're nice sized so we've been eating one
at a time. The last time we went to Peachy's we got the larger square
that I cut down into small loaf (individual) pan sizes. Going with the
flow of what the butcher has, and this time was a different butcher.
Somewhat different taste in the scrapple too.

Catch you later,
Ruth
