I am glad to be out the body shop -- I can finally take a nap or get a night's
sleep without being awakened by anything except my bladder.   Bv)=

I went from Sunday morning when my friends and I attended an Honour Flight
benefit breakfast at the local KC hall ... until Thursday evening with nothing
to eat since the breakfast on Sunday and nothing to drink from about 8 ayem on
Monday. Finally, on Thursday evening they told me I could have "clear liquids".
So, I got an apple juice, a strawberry Popsicle, two iced teas, some cherry
jello and a bowl of chicken broth. 

After all my bragging on the food at Memorial Medical Centre (here and
elsewhere) guess what? The only hot thing on that list was beyond nasty. I
dunno how one manages to eff up chicken broth. Perhaps it's a special talent.
Thankfully when they let me have solid grub the next day things were as
expected, tasty and well done with no shockers like that yellow stuff .....
wait a minute ..... I just remembered what else is yellow.  Bv)=

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Chicken Broth - Parade
 Categories: Poultry, Soups
      Yield: 16 Servings
 
      6 lb Chicken backs and wings
      4    Ribs celery; w/leaves
      4    Carrots, unpeeled, halved
      2    Parsnips; unpeeled, halved
      1 lg Tomato, halved
      4 cl Garlic; lightly bruised
      8    Sprigs flat-leaf parsley
      4    Sprigs fresh dill; (opt)
      2 bn Fresh thyme
      6    Black peppercorns
      4    Whole cloves
      1    Bay leaf
      1 tb Coarse salt; to taste
     16 c  Water
 
  Rinse the chicken pieces. Remove and discard any excess
  fat. Place the chicken in a large pot with the remaining
  ingredients.
  
  Bring to a gentle boil over medium heat. Reduce heat and
  gently simmer, partially covered, for 2 hours, skimming
  the foam off the top. Adjust seasonings.
  
  Strain the broth twice through a fine sieve to clear.
  Then allow the broth to cool to room temperature.
  
  If the broth is to be used immediately, set it aside for
  15 minutes to allow the fat to rise to the surface, and
  then skim off the fat and discard it. (or save it for
  schmaltz - UDD)
  
  If the broth is not for immediate use, transfer it to a
  storage container and refrigerate it covered. Use within
  3 to 4 days, or freeze for up to 3 months. Remove the
  layer of fat from the top before using the broth.
  
  Makes about 16 cups.
  
  Serving Ideas: Use this broth in "Berta's Chicken Vegetable
  Soup".
  
  NOTES: Begin the broth with a soup chicken or fowl. Don't
  overfill the pot with water, or the flavor will be weak.
