I found a strange consistency among the cabbage kimchis
here, much more than one would find in, say, dill pickles.
This from a variety of places of a variety of pretentions,
plus see next post.

The noncabbage kimchis varied quite a lot.

Actually, many of the tourists wondered what it was at all,
one or two telling the others, you have to try this stuff
once in your life, it's what Korea is all about. Which is
probably true, as one smells it everywhere, in the air, on
people's breath, et cetera et cetera et cetera.

Other things I passed up were silkworms, sold on many
street corners, and big footlong octopus tentacles, which,
truth be told, I wondered how to eat - they were also sold
in sidewalk stalls along with snacky things - but I didn't
see anybody walking along munching on one. Although that
would have been cool, sort of like the turkey drumsticks
at a renaissance faire.

Seoul is so far north that the northern gate of the city
can be visited only with the permission of the military;
you have to bring your pasport and all, lest you be mistaken
for the vanguard of a North Korean invasion. Look up North
Korean infiltration tunnels sometime, and you will be
astounded by how vulnerable Seoul itself is - one day's march
from the North. If only they'd made the treaty boundary based
on the 39th parallel rather than the 38th, it would have been
Pyongyang's problem rather than Seoul's.

MMMMM----- Recipe via Meal-Master (tm) v7.07

      Title: Instant Kimchi (Korean Gut Churi Kimchi)
 Categories: Korean, Vegetarian
   Servings:  4

      1    Chinese cabbage
      2    Cloves Garlic
      1 ts Hot pepper
      1 ts Soy sauce
      1 ts Vinegar
      1 tb Salt
      1 tb Sugar

  1.  Chop the cabbage into pieces about 1 1/2 inches long by 1 1/2 inches
  wide. Three cups of chopped cabbage are needed.

  2.  Crush the garlic and blend with the hot pepper, soy sauce and vinegar.
  Add the cabbage and mix well. Add the salt and sugar, mix and cover until
  ready to serve.
