My guess would be that if you walked up to the average
Joe in Peoria and asked them what they thought about
sushi, they'd say "huh?"

Safety being less important than susceptibility to the powers
of peer pressure and advertising. I knew a guy who drank only
Voss water. And what's this bologna about Fiji water being an
ecologically informed choice, when the stuff is shipped 5000
or more miles and then put into nonbiodegradable plastic bottles?

It just seems to be such a great idea.

Stewed Chicken Wings with Chestnuts 
cat: Chinese, main, poultry
servings: 2 or 3

600 g chicken wings
300 g chestnuts, removed shells and papery skin
1/2 ts minced garlic
2 c water or to cover
basil, for garnish
h - Marinade
1 ts freshly grated ginger juice
1 ts cooking wine
1 Tb light soy sauce
2 Tb dark soy sauce
1 ts cornflour
1/2 ts sugar
1 pn white pepper
h - Seasoning
1 ts light soy sauce
1/2 ts sugar
1/2 ts salt
1/2 ts cornflour
1 Tb oyster sauce
1 pn pepper
1 ds sesame oil

Remove the shells of chestnuts with the tip of the knife and
peel the inner brown papery skins off.

Marinate chicken wings at least 20 min. If the chicken wings
are frozen, defrost and blanch them in boiling water for 3 min.
Drain well, and then marinate them.

Heat oil on a wok over medium heat to saute minced garlic until
aromatic. Add marinated chicken wings. Stir and cook until the
chicken turns lightly brown. Add chestnuts and stir fry for a
while. Pour in water to cover all the ingredients. Bring it to
a boil and cover with a lid. Turn to lower heat and simmer
until tender. Add seasoning to thicken sauce to your preferred
consistency. Garnish with basil if you like.
