MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: TEXAS CAKE
 Categories: Cake, Chocolate
      Yield: 1 servings
 
      2 c  Flour
      2 c  Sugar
    1/2 c  Butter
    1/2 c  Shortening
      1 c  Strong brewed coffee
    1/4 c  Unsweet cocoa
      2    Eggs
      1 ts Vanilla
      1 ts Baking soda
    1/2 c  Buttermilk*
    1/2 c  Milk*
      2 ts Vinegar or lemon juice*

MMMMM--------------------TEXAS CAKE FROSTING-------------------------
    1/2 c  Butter
      2 tb Cocoa
    1/4 c  Milk
  3 1/2 c  Powdered sugar
      1 ts Vanilla
 
  Combine flour & sugar.  In heavy saucepan, combine butter, shortening,
  coffee and cocoa.  Stir and heat to boiling. Pour boiling mixture
  over the flour and sugar.  Add the buttermilk (*or substitute milk &
  vingear), eggs, baking soda and vanilla.  Mix well. Pour into a well
  buttered 17 x 11 jellyroll pan.  Bake at 400 degrees for 20 minutes.
  While cake bakes, prepare frosting.
  
  In a suacepan, combine butter, cocoa and milk. Heat to
  boiling, stirring.  Mix in the powdered sugar and vanilla until is
  smooth and of a pouring consistency.  Pour warm frosting over cake as
  soon as you take it out of the oven.  Cool.

      Title: CHOCOLATE CAKE (COCOA)
 Categories: Cake, Chocolate
      Yield: 3 servings
 
    3/4 c  Butter
  1 2/3 c  Sugar (I used 1 1/3 and it
           -was fine)
      3    Eggs
      1 ts Vanilla
      2 c  All purpose flour
    2/3 c  Cocoa
  1 1/4 ts Baking soda
    1/4 ts Baking powder
      1    Scant teaspoon salt
  1 1/3 c  Water
 
  Combine butter, sugar, eggs and vanilla in large mixing bowl. Beat on
  high three minutes. (Don't skimp on the time)
  In a separate bowl combine flour, cocoa, baking soda, baking powder
  and salt. (I used the same bowl)
  Add alternately with water and cocoa to creamed mixture. (I just
  dumped it all into the bowl. Why waste dishes?)
  Blend until just combined.
  Pour into 2 9" cake pans or one 9 by 13 inch pan. Bake 30 to 35 min.
  at 350 degrees until toothpick inserted in center comes out clean.
  Cool ten minutes, remove from pans. Cool completely and frost!
  8 to ten servings
