I think that it was the army that first introduced us to Tex-Mex.  We
were stationed at Ft. Devons and one of the others there had us over for
a taco dinner.  Then when we had an overseas tour later as a civilian,
our next door neighbor was Indian and Gail learned things from her.
Gail also took lessons in Chinese cooking here in Columbia, although I
don't recall if that was before or after England.  Later on, we
introduced ourselves to Thai and Cajun from cookbooks.

BTW, I am a little bit skeptical about the carb count in this recipe.

      Title: Decadent Triple Layer Mud Pie
 Categories: Cakes and p, Chocolate
      Yield: 8 servings
 
      2    Squares semisweet baking
           -chocolate -- melted
    1/4 c  Sweetened condensed milk
      1    Chocolate pie crust
    3/4 c  Chopped pecans -- toasted
      2 c  Cold milk
      2 pk Jell-O Chocolate Flavor
           -Instant Pudding
      1    Tub Cool Whip -- thawed
 
  Pour chocolate and sweetened condensed milk into bowl; stir until
  smooth. Pour into crust.  Press nuts evenly onto chocolate in crust.
  Refrigerate 10    minutes.
  
  Pour milk into large bowl.  Add pudding mixes.
  
  Beat with wire whisk about 2 minutes or until smooth (mixture will be
  thick).  Spread 1 1/2 cups of the pudding over chocolate in crust.
  Immediately stir 1/2 of the whipped topping into remaining pudding.
  Spread over pudding in crust.  Top with remaining whipped topping.
  
  Refrigerate 3 hours or until set.
  
  Garnish if desired.
  
  Per serving (excluding unknown items): 123 Calories; 9g Fat (66%
  calories from fat); 2g Protein; 9g Carbohydrate; 3mg Cholesterol;
  14mg Sodium Food Exchanges: 2 Fat; 1/2 Other Carbohydrates
