Ärende: Low Calorie Recipes
===========================
Hi Jason,

 > Have you talked with a dietician since being diagnosed as diabetic? If
 > so, she (he, sometimes but more often she) probably told you to pay
 > attention more to carbohydrates (carbs) instead of calories. Are you on
 > any oral meds or insulin? They help, but are not the total answer.

JC> I have talked with a dietician. In fact, my Dr. didn't give me a
JC> choice, he made the appointment for me. It was an eye opening
JC> experience. It's the first time I had ever talked to anyone in the
JC> medical profession about how I am supposed to eat.

Honestly, most medical professionals don't know much more about
nutrition than the average person. It's not a major part of med school,
but should be. I've taught a good number of my doctors about healthy
eating.

JC> I'm only supposed to eat about 60g carbs for each meal, and about
JC> 20-30g of carbs for a snack. The lower obviously is the better.
JC> Those numbers are more of a "don't go over this amount" kind of
 JC> number.

Being a guy, you get a higher amount of carbs than I do. I'm not
supposed to go over 45 for most meals; I can have 60 but for only one
meal each day. (Honestly, most of mine are in the lower range; I have
very few 60 carb meals in a week.) My snack limit is 15 carbs.

JC> Luckily, I don't take insulin. I'm on oral medications.

I'm not on any meds now, just watching what I eat.

 > and cut out a lot of sugars. As the blood glucose numbers improved, I
 > also lost about 35 pounds without really working out. Also, in watching
 > your carbs, make sure you balance them with protein.

JC> It's been real hard. I use myfitnesspal.com to track everything that I
JC> am eating but it's been real difficult because of the type of
JC> lifestyle that I have to lose any weight.

Do you have a smart phone? There are several apps I use (on an android
system) that are good for figuring carbs. One has a lot of chain
restaurant menu items and various nutritional data. Another is specific
foods (but a lot of them!); data is based on a serving of 100 grams.
They're my "go tos" for finding a lot of carb counts.

 > You don't have to give up all the things you like, just enjoy them in
 > moderation. For example, instead of several pieces of a thick crust
 > pizza, go for a big tossed salad first, then a slice or two of a thin
 > sparingly. Also read ingredients and nutrition labels, anything ending
 > in --ose is usually a sugar. There are a number of sugar substitutes on
 > the market; I use stevia as it's the only one derived from a plant, not
 > a chemical factory

JC> This is kind of what I was saying above. I am trying harder now to
JC> eat better and eat at home more. My situation has changed because I
JC> now work for myself at home doing my online business, so now I have a
JC> huge opportunity to really eat better, which is why I flocked to this
 JC> echo! :)

You'll enjoy getting to know the various folks here. From time to time
you'll see the name Stephen Haffly pop up; he's my husband. We spent 26
years moving all over the world with the Army. He retired 4 years ago
and we moved to Wake Forest, NC so he could go to seminary. I sew for (a
local portrayer of) Santa Claus and Quilts of Valor, among other
projects. We cook/eat very internationally having lived in Germany,
Korea (Steve) and various places in the States.

JC> I've been watching a lot of the TV show "The Biggest Loser" from the
JC> first seasons on hulu, and it's been eye opening. One of the recent
JC> episodes that I watched showed a guy usually ate three different types
JC> of cheeseburgers from a fast food place, and then another lady with a
JC> big caesar salad with dressing (I don't remember the kind of dressing)
JC> and what was crazy was there was more calories in the salad with the
JC> dressing than there was in the three
JC> cheeseburgers this other guy was eating. It totally messed with my
 JC> head.

I've not watched the show; I think they skew some things to make it look
more dramatic than it is. Meat has no carbs so most of what carbs that
guy ate came from the buns. OTOH, even salad greens have 5 carbs per cup
so a large salad can add up the carbs fast. What they don't tell you is
that there are good and bad factors in both choices--you need to know
the difference and how to make food work for you.

JC> As for the sugar, one of the biggest things I have been able to do to
JC> cut down on my sugar intake was to get rid of the cokes in the house.
JC> I'm drinking a lot more water, and the occasional soda when I have to
JC> eat out, and then it's diet, which isn't that great for you either.

I have a diet Coke about once or twice a week but for the most part
drink water or tea. One of the hardest parts of getting the diabetes
diagnosis was giving up sugar in my tea and orange juice in the morning.
But, one of the better parts was the amount of research Steve did on
everything--and his willingness to adapt to the changes in eating.

 > I'm sure others will help you out too; this echo is a big kitchen table
 > with lots of friendly folks sitting around it. Enjoy your time here.
 JC> >

JC> So I've definitely noticed that the people here are friendly. I put
JC> FidoNET back up on my BBS, and the biggest thing I remember about
JC> fidonet was it was nicknamed "Fight-o-net" in my neck of the woods, so
JC> it's been very refreshing to actually post in a echo and not get your
JC> head chopped off. :) So I like the big kitchen table concept.

There may be disagreements from time to time but usually nothing too
major. Some of us say chili should have beans in, others say "no beans";
every so often a discussion on those lines will flare up and we all jump
in with our opinion. Usually the moderator (Michael Loo) is pretty easy
going about what's discussed as long as there's some relationship to
food, somewhere in your message.

Catch you later,
