Ärende: Low Calorie Recipes
===========================
Hi Jason,

 > Honestly, most medical professionals don't know much more about
 > nutrition than the average person. It's not a major part of med school,
 > but should be. I've taught a good number of my doctors about healthy
 > eating.

JC> My dietician really seem to be "book" smart about the whole diet
JC> thing. I was able to ask her questions and she seemed to know the
JC> answers and even when doing my own research, her answers were in the
JC> ballpark, so I have to believe she knows a couple of things about
 JC> diabetes diets. :)

That's good, and if you communicate well with her, half your battle is
fought. It's no longer "Stay away from all sweets and starches" but
"Here's how you eat sensibly" (including sweets and starches).

 > I'm not on any meds now, just watching what I eat.

JC> Congrats!! I look forward to the day when I don't have to take my
JC> meds. Honestly, from time to time, I forget to take my meds. I've
JC> never had to take medicine daily my entire life like this. So it's
JC> something that I'm definitely not used to. I do try and remember to

I've been taking multi vitamins for years, and gradually adding other
pills. Vitamin C in heavier than standard amounts helps keep my lungs
clear but I do have to use a twice daily maintainance inhaler. IOW, the
prick my finger was just one more thing added to the daily routine.

JC> take my meds, and sometimes my wife will remind me to take them, but I

Good to have a loving "nag"; she wants to keep you around as long as she
can.

JC> definitely can't wait for the day when I drop this weight and don't
JC> have to worry about taking pills anymore. I'm not much of a pill
JC> person, but I would rather take a pill for this than insulin thru a
 JC> needle.

Actually, the insulin is easier to adjust than the pills and doesn't
give you some of the less "fun" side effects. When I started on insulin,
I took 8 units, working my way up by 2 units a day until my morning
blood glucose reading was under 120. That ocurred at 34 units of insulin
but within a couple of days, at my docotor'a appointment, she cut it to
28 units. She kept cutting it (and we did, with her OK) until I got down
to 4 units. After monitoring that for a couple of weeks, we cut that out
and kept monitoring the morning blood glucose. This morning my reading
was 102, first time in a month that was over 100, but I'd had a very
late supper last night. I usually don't eat around 9:30 (but for a light
snack). Tomorrow's reading should be lower.

 > You'll enjoy getting to know the various folks here. From time to time
 > you'll see the name Stephen Haffly pop up; he's my husband. We spent 26
 > years moving all over the world with the Army. He retired 4 years ago

JC> I have to admit, all the folks here just seemed to let me right on in
JC> as the new guy without hesitation. I appreciate a good crowd.

JC> I'm a air force brat, but didn't have to move around a lot, although
JC> my mom did get stationed a couple of times in Hawaii and Germany for

OK, Hickam in HI but where in Germany? Rhine-Main, Ramstein? We spent 5
1/2 years at Schofield Barracks, just short of 6 divided between
Frankfurt and Berlin (in Berlin when the wall came down) so you're
talking familiar territory. One of our favorite places to eat in HI was
Haliawa Joe's, up on the North Shore of Oahu; we also went to a little
hole in the wall Korean restaurant in Mililani quite a bit.

JC> some time. So she's into all the different culture foods. She brought
JC> back some of those values back to my sister and I which is why I think
JC> I enjoy all types of foods.

That's good, and a lot of them can be incorportated into inot a healthy
diabetic diet.

 > I've not watched the show; I think they skew some things to make it look
 > more dramatic than it is. Meat has no carbs so most of what carbs that
 > guy ate came from the buns. OTOH, even salad greens have 5 carbs per cup
 > so a large salad can add up the carbs fast. What they don't tell you is
 > that there are good and bad factors in both choices--you need to know
 > the difference and how to make food work for you.

JC> The Biggest Loser does have a flare for drama, but thats because it's
JC> what the people want when they are watching. What I can say is that
JC> they seem to only focus on the notion of Calories in, Calories out.
JC> This is their weight loss plan. In fact, I have signed up for their
JC> Biggest Loser Club which has recipes in there that are low cal, and
JC> what not. They don't really focus on Carbs. They do stress the
JC> protein, and certain fats in foods, but for the most part it's all
 JC> about calories.

And as you know, it's not all about calories. I have been subscribing to
the "Cooking Light" magazine for a few years (since before my
diagnosis). It has some good recipies but very often, they're too high
in carbs, even tho they may be light in calories. That's a common
mistake people mistaake, emphasising only calories/"control" of them as
a means of eating healthy. Biggest Loser needs to retune their direction
but then if they did, it probably wouldn't be as dramatic.

 > I have a diet Coke about once or twice a week but for the most part
 > drink water or tea. One of the hardest parts of getting the diabetes
 > diagnosis was giving up sugar in my tea and orange juice in the morning.
 > But, one of the better parts was the amount of research Steve did on
 > everything--and his willingness to adapt to the changes in eating.

JC> The biggest loser club isn't against diet sodas, but almost everyone I
JC> come across talk about how much worse they are than regular soda
JC> because of the Aspertame in it. I read all the studies on Aspertame
JC> and it's not harmful unless you ingest very high amounts of it. So I
JC> don't let it bother me to much.

Thry the Zevia brand sodas if you can get them in your area; they're
made with stevia. It's what we buy for drinking at home over the diet
Coke.

 > There may be disagreements from time to time but usually nothing too
 > major. Some of us say chili should have beans in, others say "no beans";
 > every so often a discussion on those lines will flare up and we all jump
 > in with our opinion. Usually the moderator (Michael Loo) is pretty easy
 > going about what's discussed as long as there's some relationship to
 > food, somewhere in your message.

JC> LOL, since you brought it up, everyone knows that Chili is supposed to
JC> have Beans in it. :) HAHA Don't want to really flare anything up, but
JC> I'm sure someone will have a comment or two, and heck, I couldn't
 JC> resist myself! haha!

I've made award winning chilis both with and without beans. (G) The one
without beans had beef, elk and goat meats in it plus onions, peppers
(various), tomatoes and spices.
