      Title: Jorge Herdnerro's Latino Chili Con 5 Frijoles

      Yield: 1 Servings

      4 lb Beef; in 1/2" cubes
     75 oz (5 cans) different kinds of
           - beans; drained - light
           - kidney, dark kidney, pinto
           - black-eyed peas refried
           - beans
      1 lg Bell pepper; chopped
      1 lg Red bell pepper; chopped
      1 lg Onion; chopped
      2 cl Garlic; minced
           Chopped red chilies
      3 tb Chilli spice mix
           Cayenne Pepper
           Salt
        ds Liquid smoke flavoring
           Red Pepper sauce
           Worcestershire sauce
     30 oz (2 cans) crushed tomatoes
           Olive Oil
           Grated Cheddar

  Brown the meat and garlic in olive oil in a large cast
  iron cooking pot, and transfer it to a holding bowl. Saute
  the onions and peppers in the meat skillet until onion is
  translucent, then return the meat to the pot. Add the
  beans, tomatoes, and seasonings. Simmer for at least one
  hour. Serve garnished with grated cheese. For best
  results, cook one day in advance and let all ingredients
  get to know each other in the refrigerator overnight.

  Variation: Smoke-cook a cheap beef roast on the grill
  until well done, then cut it into .5" cubes. Saute first
  the garlic in the olive oil, then add the meat, peppers,
  beans, tomatoes, and all seasonings except the liquid
  smoke. Simmer for several hours, and add the chopped
  onions about ten minutes before serving. Serve garnished
  with the grated cheese.

  This is the recipe I used to take second place at the
  Souper Bowl of Chilli in Washington PA a few years ago. It
  was my first and only attempt at entering a cooking
  contest. Some purists out there will object to the
  inclusion of beans, but beans it has -- in abundance. It
  might not be totally authentic, but it always goes over
  well with everyone who eats it.
