Funny thing is that my recent eating habits are
uncomfortable for me, in that if I actually have a
square meal early it screws up my appetite for the
whole day (the effect somewhat diminishing as the
day goes on). As the best bargains are at lunchtime,
a big breakfast (Lilli and I arrange to get free ones
whenever practicable) is a disaster for me.

Children are more resilient than people give them credit for,
and in many cases a defective diet doesn't have obvious bad
effects.

Drink coupons are a godsend in cases like that. I tend to
swill down just enough to ensure that I sleep a bit on the
flight, having lived enough life of excess for two or three
average people.

Good news indeed. This is for an 11-hour flight rather than
the 13+ the other direction, wind currents and all that.
Considering that the outbound was supposed to be upgraded on
booking (one pays extra for this), I do feel somewhat slighted
by the airline, which sent a letter of apology and tried to
double upgrade me on another flight but without doing anything
for Lilli, so I turned them down.

Palatschinken with smoked trout, apples, dill and horseradish yogurt

Serves: 8

h - For the batter
1 c plus 1 1/2 Tb milk
3 1/2 Tb flour
2 eggs
Salt and pepper
Sugar
h - For the filling
1/3 c smoked trout pieces
1/2 Golden Delicious apple, julienned
1/2 red onion, thinly sliced
4 1/4 ts fresh grated horseradish
2 3/4 Tb plain yogurt
2 ts dill
Lemon

Mix flour with salt and sugar. Whisk into milk. Add eggs and
mix until smooth. Set aside. Heat a nonstick frying pan until
very hot. Add a little butter and ladle in just enough batter
to cover the bottom of the pan. Once the edges start getting
brown, flip palatschinken with spatula and repeat on other
side. Makes 8 palatschinken.

Mix the horseradish and the yogurt with a little lemon juice.
Lay palatschinken flat and spread with horseradish yogurt. In
the middle of the palatschinken, place 3 or 4 slices of apple
and a thin layer of red onion and dill. Place the trout
directly on top and roll the palatschinken starting from the
side closest to you. Cut ends at a 45 degree angle and, at
the same angle, in half. Arrange each half on the plate.
Garnish plate with dill.
