Seymour Britchky once wrote about a restaurant fried zucchini
that he'd been impressed by that they were like tongue
depressors, except that first you put them in your mouth
and then you say "ah," something for which I can't find a
citation and probably won't unless/until I go to my storage
unit again. Speaking of zucchini, I was waiting to board my
plane today, and there was this fidgety-looking kid (of some
color, which might be irrelevant) who looked halfway between
a terrorist and a rapper), and he seemed eager to get on, so
I let him on before me, but then in the jetway he hung back
to accompany his friends who had tried to get in with first
class boarding, which they did, only with a rebuke from the
gate agent. Anyhow, I found an average-looking business type
getting settled in 2C, and we exchanged pleasantries as he
let me into the window seat, and just then this punky-looking
kid showed his boarding pass and evicted the business type!
By this time I was watching the passengers get on, and good
thing I did, otherwise I would perhaps not have noticed
this rather put-upon guy trying to find a space for his large
carry-on. Turns out it was the defender of the zucchini's
honor, Bobby Flay, assigned to the worst seat in first class
(1F), and how should I put it, grumpy in a gracious sort of
way, or gracious in a New York sort of way, something like
that. The somewhat cute bleached-blonde flight attendant
brought him a cup of coffee, which he refused with a touch
of indignation (it smelled better than standard airplane
coffee to me); later he accepted a cup of tea, black, but
whether out of mere politeness I don't know. The FA asked him
are you going to cook something for us, which joke went over
not too swellly; after apologizing sort of by saying something
about how wonderful his show was, she backed off, probably a
good thing. The flight was uneventful, with most of the
passengers refusing the snack tray, which included Boulder
Canyon organic potato chips (pretty fresh this time and
quite decent actually), Nonni's biscotti, and some kind of
trail mix (which my seatmate, who ended up quietly reading
I Corinthians all the time, chose but didn't seem to eat).
We landed ten early, and I ducked into the club to get some
sustenance, which consisted of Quaker golden brown sugar
artificially flavored instant oatmeal. Luckily Mr. Flay
didn't follow me into the club.

Grilled Zucchini Succotash
Categories: toxic
Serves: 4

3 zucchini, halved lengthwise
2 Tb olive oil
1 ts kosher salt
1 ts freshly ground black pepper
1 red onion, peeled and finely diced
2 cloves garlic, finely chopped
1 c blanched fresh or thawed frozen lima beans
2 ears fresh corn, kernels of
1 c low sodium vegetable stock
2 Tb heavy cream
1 plum tomato, seeded, halved and finely diced
1 grilled poblano chile, peeled, seeded and diced
1 grilled jalapeno, peeled, seeded and diced
1/4 c crumbled Queso Fresco cheese
1/4 c chopped cilantro

Heat grill to high or cast iron grill pan over high
heat. Brush cut side of the zucchini with 1 Tb oil
and season each half with 1/4 ts salt and 1/4 ts
pepper . Grill flesh-side down until lightly golden
brown, about 3-4 min. Turn over and continue cooking
until just cooked through, 3-4 min longer. Remove
from the grill and cut into small dice.

Heat the remaining oil in a medium saucepan on the
grates of the grill or on the stove top over high
heat. Add the onion and cook until soft. Add the
garlic and cook 1 min. Add the lima beans, corn and
stock, heavy cream and cook for 5 min. Add the
tomatoes, chiles, grilled zucchini and cook 2 min.
from the grill and fold in the cheese and cilantro.
