 DS> You paint a picture that brings to mind a market I recall seeing once

Probably India. Our day market was different in that it had
formerly been streets and were covered over with tin sheeting
and closed to traffic. The night market was just an ordinary
area, mostly deserted, by day but was lit up with most of the
shops opening up around dusk, with all other available space
filled with little stands.

We went to another set of markets when we got to Chiang
Mai, which is a big city of 200,000. The main day market
was a lot like the one in Chiang Rai, but the night markets
were an order of magnitude bigger, more raucous, and almost
as over-the-top as in Bangkok - adult entertainers (male,
female, but mostly transsexual) in the street, dancing in
front of awestruck European tourists and their children;
beer gardens set up in parking lots, and so on. Lilli joked
that she wanted a B30 beer (under a buck), and oddly, we
found something like that at the Duangtawan Hotel, catty-
corner from ours, where the outside bar offered a pitcher
for 190, but between 5:30 and 8 you got an extra mug with
that, so 38 apiece for 5 beers.

I bought a few elephant trinkets (bargained the vendor down
by 50% to B55 apiece, which I know is the list price at
the museum shop on the other side of town. No owls in sight,
sorry to say.

Khao Pad Nam Prik Pao
cat: Thai, rice
servings: 2

1 md onion, chopped
2 c cooked rice (leftover cold rice is fine)
2 Tb vegetable oil
1 Tb fish sauce, to taste
2 Tb nam prik pao (approximate) *
2 eggs
lime wedges

Fried Rice with Nam Prik Pao

1. Heat the oil in a nonstick skillet over medium high heat.
2. Add the onions and cook until soft.
3. Add the rice and fry for about 2 min, stirring.
4. Add the fish sauce and nam prik pao, to taste.
5. Transfer rice to plates and then add a little more oil to the pan. Fry the
eggs on one side, leaving yolk slightly runny.
6. Serve on top of the rice with a squeeze of lime.

*If you don't have homemade nam prik pao, Pantainorasingh
is a store-bought brand.
