      Title: Apple Cake W/Brown Sugar Icing

MMMMM----------------------------CAKE---------------------------------
      3 c  All-purpose flour
      1 ts Baking soda
    1/2 ts Salt
  1 1/2 c  Oil
      3    Eggs
  2 1/4 c  Sugar
      2 ts Vanilla extract
      2 c  Chopped pecans
      3 c  Fine chopped apples;
           - peeled
           +=OR=+
     20 oz Can of Comstock sliced
           - apples (not Apple Pie
           - Filling); drained, diced

MMMMM---------------------BROWN SUGAR ICING--------------------------
    1/2 c  Butter
    1/2 c  Brown sugar; packed
    1/4 c  Milk
 
  Yes, it is possible to make an apple cake without cinnamon.
  This cake is high and light, moist and tender, and tastes
  wonderful. The brown sugar icing is really more like a
  caramel sauce. It really completes this cake.
  
  Preheat oven to 350øF. Grease and flour a 10-inch tube pan.
  (Do not mistake a 10-inch tube pan for a Bundt pan; this
  recipe will overflow a Bundt pan.)
  
  Combine flour, baking soda and salt. Stir well, and set
  aside.
  
  Combine oil, eggs, sugar and vanilla. Beat at medium speed
  for 3 minutes. Add dry ingredients at low speed. Batter will
  be thick. Add pecans and apples at low speed.
  
  Pour batter into prepared tube pan, and bake at 350øF for 1
  hour and 30 minutes, or until cake tester comes out clean
  when inserted in center of cake. Cool in pan for 10 minutes,
  then invert on serving plate and remove pan. Drizzle Brown
  Sugar Icing over warm cake.
  
  Brown Sugar Icing:
  
  Combine butter, brown sugar and milk in a heavy saucepan.
  Over medium-high heat, bring mixture to a full boil. Cook,
  stirring constantly, for 3 minutes. Let cool to lukewarm.
  
  Note: As of this writing, Comstock has discontinued their
  "Pie-Sliced Apples". It was an excellent product and,
  hopefully, they will see fit to bring it back in the future.

      Title: Fried Twinkies
 Categories: Snacks, Desserts, Non-food
      Yield: 6 servings
 
      6    Twinkies
           Popsickle sticks
      4 c  Oil
           Flour for dusting
      1 c  Milk
      2 tb Vinegar
      1 tb Oil
      1 c  All-purpose flour
      1 ts Baking powder
    1/2 ts Salt

MMMMM--------------------BERRY DIPPING SAUCE-------------------------
     10 oz Jar of seedless raspberry
           - preserves
      1 c  Fresh or frozen mixed
           - berries
 
  In a sauce pan, heat preserves over low heat until melted.
  Add 1 cup of fresh or frozen mixed berries. Heat until sauce
  just simmers. Remove from heat, cover, and refrigerate.
  Makes 1-1/2 cups.
  
  Chill or freeze Twinkies for several hours or overnight.
  
  Heat the 4 cups of vegetable oil in a deep fryer to about
  375øF. In one bowl, mix together milk, vinegar, and oil. In
  a large mixing bowl, blend flour, baking powder, and salt.
  
  Whisk wet ingredients into dry and continue mixing until
  smooth. Refrigerate batter while the oil heats.
  
  Push stick into Twinkie lengthwise, leaving about 2 inches
  to use as a handle. Dust with flour and dip into the batter.
  Rotate the Twinkie until the batter covers the entire cake.
  
  Place carefully in the hot oil. The Twinkie will float, so
  hold it under with tongs to make sure it browns evenly. It
  should turn golden in 3 to 4 minutes. Depending on the size
  of your deep fryer, you may be able to fry only one at a
  time, or two at the most.
  
  Remove Twinkie to paper towels and let drain. Remove stick
  and allow Twinkie to sit for about 5 minutes before serving.
  Fry the rest of the Twinkies the same way. Makes 6.
  
  Variation: Slice Twinkie into 4 pieces. Flour and batter
  each before frying. This way, one Twinkie will serve 2
  people.
